GRAPE AND FETA KALE SALAD
Tomorrow the kids go back to school after winter break and I’m dreading it. I’m not one that loves schedules. I love disrupting the schedule and calling audibles as to what our day will be.
With that being said, our bodies are calling for vegetables not chips, for fruit not sugar. It’s time.
It’s a bit cliche to start eating healthy at the New Year but quite frankly we don’t care and are embracing it with this kale salad.
Now we all love the kale salad from Costco. You know the one I’m talking about. Packed with Superfoods and drizzled with a sweet dressing. Even I can get burned out on that kale salad and need to switch things up.
We also always buy grapes from Costco which I what inspired this salad. This kale salad has grapes, walnuts, and feta all drizzled with a honey vinaigrette. These are the kind of salads I like. Full of “stuff”.
WHY USE SEASONED RICE VINEGAR?
Seasoned rice vinegar is the mildest and sweetest of all the vinegars which compliments the bitterness of the kale. If you don’t have seasoned rice vinegar you can use regular rice vinegar and add some additional honey to taste. You could also use apple cider vinegar or lemon juice as a substitute.

Grape and Feta Kale Salad
Ingredients
- 6 cups kale, torn into bite sized pieces
- 8 ounces red seedless grapes, halved, (about 1 3/4 cups)
- 3/4 cup chopped walnuts, toasted
- 1/2 cup crumbled feta cheese
Dressing:
- 2 tablespoons honey
- 2 tablespoons seasoned rice vinegar, (see Note)
- 1 tablespoon olive oil
Instructions
- In a large bowl, toss the kale, grapes, walnuts, and feta together.
- In a small bowl, whisk together the honey, rice vinegar, and olive oil. Pour over the salad and toss to coat. Add salt if needed.
I don’t have any red grapes on hand… Can I substitute with strawberries?

This is probably one of the best things I’ve ever eaten!!! And could it be any easier?? I don’t even know what else to say…restaurant worthy. Incredibly delicious!

I just made another big batch, and I’m going to eat the whole thing myself over the next three days!! I’m so excited 😆 I even eat it for breakfast sometimes.
As far as Kale goes this is a winner. I did use apple cider vinegar just because I really like it.
I made this tonight but replaced the rice wine vinegar with fresh lime juice. It turned out so good! Any tips for if this will last for a couple of days or just a one night deal?
Leaving the dressing off separate will extend the life of it. You can just add it as you eat it.
