Healthy Spicy Beef and Black Bean Chili
It’s the 3rd week of the New Year…how are you holding up? Are you still sticking to your resolutions? I thought for once I wouldn’t have to lose weight this New Year.
I held my ground until mid-December then from Christmas on it was an eating free for all.
I tried as hard as I could to not water down my calories with healthy things like vegetables. I considered it my personal responsibility to taste every dish at every holiday party AND every treat on every holiday plate from my neighbors and friends.
Soooo….I have a couple of elle bees to lose. I’m not going to be too hard on myself. In fact, the older I get the more forgiving I am. Sometimes you just have to eat the cake, eat the fries,…enjoy your life.
People always think that if you are trying to eat healthy you have to stick to chicken and fish. The truth is if you eat the right cut of beef or pork, it’s just as low in calories.
You need to choose a lean cut of meat like sirloin in this recipe. Make sure the package has a lean to fat ratio of at least 85/15.
I know everyone has a chili recipe…but do you know exactly what’s in your chili recipe? Unlike soup, this is thick!
I have peace of mind when I know how many calories are in a recipe (unless I’m indulging then I don’t want to know 🙂 ) and one serving of this Healthy Spicy Beef and Black Bean Chili is 298 calories.
It takes around 12 minutes to cook start to finish so cross the “healthy cooking takes too long” excuse out of your brain.

Healthy Spicy Beef and Black Bean Chili
Ingredients
- 1 pound ground sirloin or regular ground beef
- 1 Tablespoon Taco seasoning, (or more to taste)
- 1 (15 ounce) can whole kernel corn, drained
- 1 (15 ounce) can black beans, undrained
- 1 (10 ounce) diced tomatoes with green chilies, drained
- 1 (10 ounce) can diced tomatoes with green chilies, undrained
- 1 cup water
- 1/2 teaspoon black pepper
- 6 Tablespoons sour cream
- chopped green onion or cilantro for garnish, (optional)
Instructions
- Cook beef in a medium pot on medium high heat until browned. Drain and return to pan. Stir in taco seasoning and all of the other ingredients except sour cream and garnish. Cover and bring to a boil. Reduce heat and simmer for 7-8 minutes or until heated through. Pour into bowls and top with sour cream and garnish.
Super Bowl of Chili! This is a winner. We are all trying to eat healthier in the New Year and this will be great for the big game instead of our usual pizza or loaded nachos. I doubled the meat to two pounds and used organic ground sirloin, browning with chopped onion – cuz why not? I didn’t drain the minimal fat; it added flavor. I also didn’t drain either can of tomatoes (Rotel). I used my own taco seasoning (check a previous post). This is a quick and simple recipe. I did, however, let it simmer on lowest temp for 2 hours to meld flavors. Yum. I set up a buffet of add-ons including chopped purple onion, shredded Mexican cheese, diced jalapeños, guac, and sour cream. BIG hit!

Is using “taco seasoning” healthy?
Isn’t it full of msg and other unknowns?
I thought this was labelled “healthy”. I’d prefer a recipe to use real spices from a spice rack not processed taco seasoning…yuck!
Have you tried Siete taco seasoning? It is clean
I make my own taco seasoning ~
3 tablespoons of garlic powder
3 tablespoons of ground cumin
3 tablespoons of kosher salt
3 tablespoons of chili powder
3 tablespoons of paprika
1 1/2 tablespoons of dried oregano
1 can or two of tomatoes
Two cans. One drained, one undrained
So easy and delicious! I used frozen sweet white corn since I don’t like canned corn and it perfectly balanced the spice from the medium spiced tomatoes with chilies. I also added a little cheddar cheese and avocado instead of the sour cream since I didn’t have any. Recommend!!

Yum! Just stumbled across this blog via TasteSpotting. Looks terrific! Another easy tip to cut the calories in chili or soup is to replace the sour cream with low fat plain yogurt (I seriously think it tastes better than sour cream anyway)! Good luck with the resolutions! 🙂
