CHICKEN NOODLE SOUP RECIPE
After Halloween, I usually never want to eat again. At least that’s what I tell myself and then at 4 pm I’m like hmm, I could go for a Twix. What is wrong with me?
Of course this pattern isn’t new. Ever since I was a little girl I would eat my candy as I went trick or tricking until I had a stomachache and my mom would fix me a bowl of chicken noodle soup at the end of the night.
Can I tell you that homemade chicken noodle soup has always been super intimidating to me?
My mother-in-law has always killed it this department, whipping it up like it was taking the dishes out of the dishwasher…just something you do.
But for some reason I could never get it right. The broth/chicken ratio. The noodles. I tend to do this with cooking. For instance, he first time cooking rice was super intimidating to me 10 years ago. Something so simple yet I always under or overcooked it.
This homemade chicken noodle soup recipe…I don’t know why I complicated it so much. It’s veggies, broth, and some seasonings – not rocket science.
I always felt like an ingredient was missing but now I’m completely satisfied with this classic chicken noodle soup.
HOW TO MAKE CHICKEN NOODLE SOUP
INSTRUCTIONS

For the noodles: In a large bowl, stir together the flour and salt. Add the beaten egg, milk, and butter. Knead dough until smooth, about 5 minutes. Let rest in a covered bowl for 10 minutes.

On a floured surface, roll out to 1/8 or 1/4 inch thickness. Cut into desired lengths and shapes.

Separate and allow to air dry before cooking.

For the soup: In a large pot or Dutch oven over medium-high heat, melt butter. Cook onion, celery, and carrots in butter until just tender, 5 minutes. Add the garlic and cook for an additional minute. Pour in chicken broth and stir in noodles, basil, oregano, (optional) poultry seasoning, salt and pepper. Bring soup pot to a boil, then reduce heat and simmer 20 minutes. Add the chicken and cook until heated through. Serve.
HOMEMADE NOODLES
The thing that takes this over the top are the homemade noodles. You can totally use store bought egg noodles. I don’t love them but if that’s all you have – it will work.
If you’re lucky enough to have those Grandma egg noodles in your stores, they are good too.
But seriously, I’m not one to make my own sandwich bread or anything like that but you guys…these homemade noodles are so easy. No yeast. You can totally do it.
I like my soup heavy on the noodles.
After you roll them out and cut them you separate them and let them dry out. You can make any shape you want. Make it fun!
Remember they will get a little larger when you cook them so don’t make them too long or thick.

WHAT IS IN CHICKEN NOODLE SOUP
The ingredients in this soup are simple and can be found at our grocery store: chicken, carrots, celery, onions, noodles, broth, and herbs.
- CHICKEN: You can use rotisserie chicken, chicken breasts or chicken thighs, or cook a whole chicken. This is a great way to you leftover cooked chicken.
- BROTH: The chicken broth is the base of this soup. I like to use Better than Bouillon Base with cups of water because of it’s rich flavor. You could make your own homemade chicken stock if you want or use bone broth. Homemade chicken broth would be great but not it’s personal preference.
- VEGETABLES: Carrots, celery, and onion are the classic veggies in chicken noodle soup. Feel free to add your own.
- NOODLES: Homemade egg noodles do not take that long and take this soup to the next level! If you’re running short on time, store bought wide egg noodles will work. But the type of noodles matter and homemade make this the best chicken noodle soup recipe. Cooking them al dente makes them delicious!
- OPTIONAL – You can use fresh herbs like fresh parsley, fresh dill or bay leaves. You could even add a squeeze of fresh lemon juice.
CAN I MAKE THE NOODLES AHEAD OF TIME?
Yes. You can dry out the noodles up to a day ahead. You also don’t have to dry them out if you don’t have time.

Ingredients
EGG NOODLES:
- 1 1/4 cups all-purpose flour
- 1 pinch salt
- 1 egg, beaten
- 1/4 cup milk
- 1/2 tablespoon butter, softened
SOUP:
- 2 tablespoons butter
- 3/4 cup chopped onion
- 3/4 cup chopped celery
- 1 cup sliced carrots
- 2 garlic cloves, minced
- 9 cups reduced sodium chicken broth, (see note)
- 2 cups uncooked egg noodles, (store bought or homemade recipe above)
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- optional dash of poultry seasoning
- salt and pepper to taste
- 2 cups cooked and shredded chicken breasts

Pour in chicken broth and stir in noodles, basil, oregano, (optional) poultry seasoning, salt and pepper. Bring to a boil, then reduce heat and simmer about 15-20 minutes. Stir in the chicken and cook until heated through. Serve.

I love the homemade noodles. They definitely complete the soup. The only difference I did was use low sodium broth. But added more herbs. I loved it. So flavorful. Never thought to add herbs to chicken noodle soup. Can you use white wheat flour?

Let me start off with MY FAMILY LOVES THIS RECIPE!!! It is by far, one of the all time favorites among a pretty diverse crowd of picky eaters (at times). LOL So I know the recipe like the back of my hand BUT I normally double it but I have never counted exactly how much is in a serving. So heres the story, my oldest son who is 9, was just diagnosed with Type 1 Diabetes, insulin dependent. That means that for every carb that he eats, he has to have an insulin injection. BUSY WORK!! We have been able to find a good rhythm when it comes to his everyday meals but we are now getting into the fall meals that we love which arent common since we live in Arizona. Some recipes I come across, have the nutritional info on it which makes it easy but alot of them dont so we need to put our brains to work and do the math and figure it out on our own. LONG story short, I would like to know how much is in one serving of your fantastic soup so I can give my son HIS favorite soup.

Hi do you still boil this for 20 minutes after you put in the fresh homemade noodles? Or is that the length of time for store bought noodles?
Yes, that’s for homemade. Store bought might take only 8-10 minutes.
How do you store the noodles if you are using them the next day?
You could dry them out until the next day! THat would be great or store them in the fridge.
The noodles are time consuming for me. I have a short cut that is just as good if not better.: small bowl, crack 4 eggs, salt and pepper to taste. Add flour by spoonfuls and mix till a paste like consistency. about 4-6 large tablespoons. More flour will make a firmer noodle and less will make a softer one. Just have to experiment as too how you like. Fill spoon with the flour egg mixture and with a knife, just scrape off strips and drop into soup which is simmering. Done. let simmer for few minutes.I call them dumplings but really just the same as a noodle.

This turned out really nice! I’d never made homemade chicken noodle soup before (much less with actual homemade noodles), but my husband’s mom always used to make it and he loved it. The end product was delicious, and the noodles were pretty fun to make! The only thing I switched up was using thyme and bay leaves to season the broth instead of the suggested basil and oregano. I have used your noodle recipe FOREVER! Tonight I had a little fun with them… After cutting the dough into noodles, I twisted the noodles and let them dry for about 45 minutes before adding them to my soup. My husband thought it was so fun to have twirled noodles for a change. Oh and I always make a big dumpling just for him! Love this recipe.

Made this soup and noodles this weekend. It came out great. The only issues I had with it were totally my fault. First, I didn’t roll the noodles flat enough so they puffed up a little when cooked, but they were good anyway. Second, I used the Better than Bouillon (definitely recommend) but then I added a wee too much salt to the chicken and broth.
Still delicious and I’m looking forward to making it again…and again.

This was simply delicious. Instead of chicken broth and only chicken breasts, I used a rotisserie chicken. After removing and shredding both the white AND dark meat, I cooked down the bones for hours to make a dense and delicious base. Other than that, I followed the recipe, including the home-made noodles. Simply delicious!

How do you make the shredded chicken?
I boil chicken breasts and once fully cooked, put the chicken in a bowl and shred with with an electric mixer! Takes seconds to shred! Best hack ever! Enjoy!
I use a rotisserie chicken or you can boil chicken in chicken broth with salt and pepper then shred.

I neglected to mention I bought a huge rotisserie chicken from walmart, shredded it and used that for the chicken. It’s cheaper and much easier.

Make it to the recipe, just added leeks and more random spices I had in the cupboard. I made enough for dinner for two plus brought a lot to work the next day. It was the first soup I have ever made and it was a hit! Really fun to make the noodles, I just would have made them smaller. Dried the noodles for about 2 hours and used 3 chicken breasts that I boiled. I would have added more carrots celery and onion but I also grew up in a house that over does veggies. I just love to add as many as possible. Maybe even some jalepeno next time. Thank you though everyone loved it!

This is a great recipe! I cook a full chicken in the instant pot and then use the bones, skin and left over juice to make the chicken stock. The stock is also made in the instant pot.

There is nothing heartier than a bowl of chicken noodle soup on a cold night! My dad used to make this weekly – sure brings back memories! And when I was in Canada, we used to make sandwiches to dip in it. Looking back, it was weird…but it’s so good! It was a BLT (made w/ miracle whip). You wouldn’t think they’d go together, but they were amazing!

How long can I let the noodles dry? Can I make the noodles the day before I make the soup and just keep them covered and in the fridge overnight, or is that too long?

True story: I made this soup with leftover turkey from thanksgiving and gave it to my mother the day she came out of surgery to remove large masses of cancerous cells. She told me this soup cured her cancer. Cancer free 2 years this week! I make it at least once a month, and it is everyone’s favorite.

When you are making your egg noodles, you don’t need a frame…you can just roll then out on a counter or tabletop,,,,cover with clean dry dishcloths and let dry…..the soup will freeze well, however just freezing the egg noodles for an extended period of time is not advised….I have dehydrated them however…..duh….that is what store bought noodles are…

The homemade noodles really do bring it to the next level of goodness (aside from the fact that my family may now demand them instead of store bought for everything) and they were very easy to make, although you do have to think ahead a bit so they can air dry.

I just made chicken noodle soup last week. It was very similar to your recipe. I like to use “real” chicken base instead of cans of chicken broth. It gives the soup an excellent flavor.

To be honest I haven’t made it in the crockpot but I don’t see why you couldn’t?
NO!!!! the soup needs to be boiling or you will loose the noodles to mush….I have tried it in the crockpot several times and the soup just isn’t hot enough to keep the consistancy of the noodles…would not want to waste all the ingredients to have the noodles disappear into muck..
I meant the soup part, not the noodles. Yes, Nan is right. The slow Cooker will make the noodles mush!

The secret ingredient is poultry seasoning! It has a little bit of sage and the combination of the herbs makes the soup taste more chicken-y, if that’s a word, LOL! 🙂
I was thinking that! how much poultry seasoning did you add? Also, did you throw the noodles into the broth uncooked or cook them first?

Made this tonight with a couple modifications, it was amazing!!! I used whole bag of Pennsylvania Dutch Kiloski egg noodles which were perfect and I used a little thyme (enough to achieve the flavor I was after) and a couple of bay leaves instead of the basil. Definitely a nice hearty soup.

It’s really up to you. I’ve let them sit out for a couple of hours but as little as 20 minutes. Just make sure to add them slowly so they don’t clump together.

I make home made noodles all the time to put in the freezer. for that purpose you want to roll them out and let dry a couple of hours. then I stack up a few and roll them into a tube and slice. then dry overnight. bag and they freeze wonderfully. I do not use this recipe, mine probably turn out dryer.
for this recipe I would assume at least an hour to dry. you would want them to be dry enough so they wont all stick together in a big ball when you add them to the broth. I would add them a small handful at a time stirring constantly. similar to when you make dumplings.

I’ve done as long as two hours and as little as 20 minutes. It doesn’t help that I live in humid Florida. I mostly go by feel. If they still feel tacky, keep drying.
