HOT SPINACH ARTICHOKE DIP
My mom wanted to make this for a family get together and called me for the recipe. I called her after to ask if it turned out.
She said, “It was really good, but I’ve never made a dip with 4 cups of mayo in it.”
I said, “Uh mom, I told you 1/4 cup mayo.”
Mom said in her sweet voice, “Oh…well, it was still really good!”
Here’s your new staple recipe. Give your arteries a break and stick to the 1/4 cup of mayo.
So why choose this Spinach Artichoke over others? Some spinach artichoke dips are served cold. I personally am not a huge fan of those.
This recipe does not have cream cheese in it. Usually cream cheese makes everything better. True. But in this instance it’s a dip that’s a little more on the thin side and goes well with a chip instead of tasting just straight cream cheese.

Hot Spinach Artichoke Dip
Ingredients
- 1 (6 ounce) jar artichoke hearts marinated in oil, drained
- 1 pkg. (9-11 oz) frozen creamed spinach, thawed
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 teaspoon minced garlic
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat oven to 375 degrees.
- Coarsely chop artichokes and put them in a medium bowl. Add spinach, mayonnaise, garlic, Parmesan cheese and sour cream and mix well.
- Pour into a shallow baking dish or glass pie pan. Bake for 20-25 minutes at 375 degrees.
- Serve it with tortilla chips and veggies for dipping.

Just made same dip to take to friends at request. I use cream cheese instead of mayo and no salt seasoning. Can use garlic powder. I add sharp white cheddar grated to parm some inside and some to top when I put it in oven. Love it warm good room temp with cracke rs too and leftovers good on omelette quiche or other casseroles .
Can this dip be made a day in advance and baked the day I’m going to serve it ?
Absolutely. I always prep it the day before.
Couldn’t find creamed spinach…will just a package of plain frozen chopped spinach work??
Yes, but it won’t have as much flavor. Maybe add extra sour cream and mayo to make up for the creaminess.
This was such a big hit! I couldn’t find creamed spinach in my grocery store (was I looking in the wrong place? I have no idea) so I just made my own with this recipe http://recipes.sparkpeople.com/recipe-detail.asp?recipe=187584 , Minus the nutmeg and used the whole 16 oz bag of frozen chopped spinach. It was so so tasty, and easy! Even making my own creamed spinach! Thanks for the great recipe! I will be making this again for sure!

Can this be made in a small crock pot instead of in the oven? Just thinking if I brought it to a party where food sat out it wouldn’t stay hot long..
I make it and use a crock pot all the time. Works perfectly!

Cream cheese would work perfectly. Let it soften so it incorporates well with the sour cream.
I make a recipe very similar but it uses about half a jar of alfredo sauce instead of the mayo/sour cream mixture and 4oz of cream cheese. It gets you the creaminess you need, but takes out the mayo. I usually add the sour cream back in because I like the bite it brings, but you can definitely leave the mayo out and not notice a difference.
Greek yogurt is a great substitute for anything mayo or cream cheese!

Honestly I like chips best but you could dip carrots or broccoli in it if you wanted.

There’s actually a tool that you insert the garlic clove into and it squishes the garlic into a paste. I usually just use minced garlic because it’s what I have on hand. It comes in a jar and stays good for a long time. It can be found in the produce section of your grocery store. A 1/2 teaspoon of minced garlic is equal to a clove of garlic.

This is one of my favorite dips! Believe it or not, I’ve actually never made it myself but I always gobble it right up and friends’ parties 🙂 I think your post convinced me to give it a go!
