Instant Pot Corned Beef
This Instant Pot Corned Beef recipe is the fastest way to make a corned beef dinner! Eat it plain or dress it up with sauerkraut, Swiss cheese, and Thousand Island dressing. This is a St. Patrick’s Day classic recipe!

INSTANT POT CORNED BEEF
My husband makes this corned beef about once every two weeks because he loves it so much. Of course he eat it with all of the fixings: melted Swiss cheese, sauerkraut, thousand island dressing, and a fried egg on top. The flavor is on point!
I finally told him he needed to write down the recipe so all of my low-carb Keto readers could make it too! Corned beef isn’t specific to those diets and is a great recipe for St. Patty’s day.
WHAT IS CORNED BEEF?
Corned beef is beef brisket cured in brine and boiled. The curing process means the meat sits in a salt brine (a pickling liquid) for a week which pickles the meat. It usually comes with a spice blend. It has a vibrant pink color and tenderizes during the cooking process.
FLAT CUT VS POINT CUT
Corned beef can be bought whole as an entire brisket but usually is bought either in a flat cut or point cut. Flat cut brisket doesn’t have as much fat and slices easier than point cut. Most grocery stores sell flat cut. Point cut has a pointed shape as the name suggests.
HOW TO COOK CORNED BEEF

Place onion and garlic in the bottom of the Instant Pot. Place the corned beef brisket on top and sprinkle with seasoning packet the beef came with. The spice packet has whole grain mustard seeds, peppercorns, and pickling spices.

Add enough cooking liquid (chicken broth or beef broth) to cover the brisket completely. Close lid to seal.

Select the manual setting on your Instant Pot; Adjust pressure to high and set the cooking time for 90 minutes. When finished cooking, use the quick release method.

When cool enough to remove, slice against the grain or shred the corned beef depending on your preference.
DON’T HAVE AN INSTANT POT?
The easiest way to cook the best corned beef is in an instant pot on high pressure. If you don’t have an instant pot to pressure cook this there are other ways you can cook this corned beef.
- SLOW COOKER INSTRUCTIONS – Cook the corned beef in a crock pot on low for 6-8 hours or on high for 4-6 hours.
- STOVE TOP INSTRUCTIONS – In a large pot, bring mixture to a low simmer and cook on top of the stove for 50 minutes per pound.
WHAT TO PUT ON TOP OF CORNED BEEF
You can eat it plain or dress it up with these toppings:

- Thousand Island dressing (use a low-carb version if doing Keto)
- A fried egg

Ingredients
- 1 medium onion, sliced
- 4 garlic cloves, minced
- 1 corned beef brisket, (about 3-5 lbs)
- chicken broth or beef broth to cover, (between 4-8 cups)
- optional toppings: Swiss cheese, sauerkraut, thousand island dressing, fried egg

Where is the nutritional information for this recipe?
Great recipe with great results! Beats my slow cooker recipe. If I want to reheat without drying out the next day what would you recommend? I kept the liquid from this and one I did in the slow cooker – was thinking I’d slow bill the liquid and throw the meat in until warm ? But open to other ideas ?
Can you cook your cabbage with this at the same time?
Sure!
For years I have enjoyed the Reuben Sandwich which is sliced C.B. sauerkraut and Swiss cheese with Russian or French dressing, than grilled on rye bread. It is a long time deli treasure.

I do not have an instant pot – would their be a conversion for crock pot cooking?
I have cooked corned beef on the stove or Slow Cooker, using the same recipe as above. Will take about 2. 1/2 to 3 hrs depending on weight. Just cook slowly until tender. It was usually sliced and served with boiled cabbage, potatoes, carrots, cooked in same stock as the C.B.
