ITALIAN SUB PASTA SALAD RECIPE
This salad has all the flavors of a sub sandwich but we add a little pasta for heartiness. It has salami, pepperoni, and deli ham with the fixings of Provolone, tomatoes, lettuce, and pepperoncini.
It reminds me of this Antipasto Salad but with pasta.
You can prep most of it ahead of time and then add the lettuce and tomatoes right before serving!
This salad is hearty! You could serve it as a main meal if you wanted.
INGREDIENTS
- PASTA – You can use any short pasta here but I really like curly pasta because it soaks in the sauce.
- PEPPERONI
- SALAMI
- DELI HAM
- TOMATOES
- PROVOLONE – The sharpness of this cheese is great and classic in an Italian sub.
- PEPPERONCINI – This gives the salad some spice.
- BELL PEPPER – This adds some crunch to the salad.
- RED ONION
- LETTUCE
You want to toss the salad in the balsamic vinaigrette right before serving!

Italian Sub Pasta Salad
Ingredients
DRESSING:
- 1/4 cup olive oil
- 1/4 cup balsamic vinegar
- 2 garlic cloves, minced
- 1 teaspoon Dijon mustard
- 1/4 teaspoon kosher salt and pepper to taste
SALAD:
- 2 cups uncooked spiral pasta
- 1 cup diced bell pepper , (any color)
- 3/4 cup sliced pepperoncini
- 1/2 red onion, sliced
- 4 ounces cubed Provolone cheese
- 2 ounces thinly sliced deli ham
- 2 ounces thinly sliced hard salami
- 5 cups lettuce, chopped
- 3/4 cup cherry tomatoes, quartered
Instructions
- In a small bowl, whisk together the dressing ingredients.
- Cook pasta in salted water according to package directions. Drain and cool.
- In a large bowl, combine bell pepper, pepperoncini, red onion, cheese, meats, and pasta. Right before serving add lettuce and tomatoes. Drizzle with dressing and toss to coat. Add more salt and pepper if needed and serve.
This recipe looks amazing, however to make a ‘single’ serving — I order an italian sub from my local pizza place and chop it all into fine pieces (I remove one side of the bun for a little less carb count!) and then put it all on top of a bed of romaine. Add the dressing that comes with the sub, and voila — a sub salad for one! It sure beats having to buy all the ingredients (my local sub shop has a Tuesday special — subs $5, so it’s a nice low-cost meal for a single person).
