KETO BISCUITS
My hubby is a faithful follower of the Keto diet and I’ve done it as well in the past. For our church potluck this weekend he was determined to make Keto friendly cheesy biscuits since everyone else was bringing cornbread to go with their chili.
My husband had a big plate of these covered in foil on his table so that he could hand them out to his friends also doing Keto at the potluck. These biscuits were so good that non-Keto people were coming up to my husband and saying, “I’ve heard you have the good biscuits!”
If you know the Keto diet well you know it’s hard to make a Keto bread that isn’t soggy or flavorless. These biscuits have a crisp outside with a tender cheesy inside.
I love these Cheddar Bay Biscuits (non-Keto) that I already have on this blog with their garlic butter glaze. These are a twist on those!
WHERE DO I BUY ALMOND FLOUR?
Almond flour is sold by the regular flour and is also sold at Costco.
WHY IS THIS KETO OR LOW-CARB?
Don’t be scared if you aren’t on the Keto diet. The Keto diet is a very low-carb diet which makes this recipe perfect with a net carb of 2 grams. See nutritional information at the bottom of the recipe.
MY BISCUITS ARE FLAT
But they taste great, right? We’ve found that the shape of the biscuits can be affected by the type of cheese you use. We like to use freshly grated cheddar cheese or cheese “off the block” sold at the store for the thicker cheese pieces. Tillamook is the brand we use. We’ve noticed that the biscuits stay in a biscuit shape and don’t flatten when you use this type of cheese. You can always add a little more almond flour to make them not as wet as well.

Keto Biscuits
Ingredients
BISCUITS:
- 2 large eggs
- 2 tablespoons cottage cheese, (sour cream can be substituted)
- 2 tablespoons butter, melted
- 1 cup almond flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon pink himalayan or sea salt
- 1 cup shredded cheddar cheese, (see note)
BUTTER GLAZE:
- 2 tablespoons butter, melted
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried parsley
- 1/8 teaspoon pink himalayan or sea salt
Instructions
- Preheat oven or air fryer to 400 degrees and line a baking sheet with parchment paper.
- For the biscuits: In a medium bowl, whisk together the eggs, cottage cheese, and butter. Set aside.
- In a separate bowl, whisk together the almond flour, baking powder, and salt. Add dry mixture to the wet ingredients and stir to combine. Mixture will be wet. Stir in the cheddar cheese.
- Drop batter into dollops onto the prepared baking pan, about 3 tablespoons each.
- Bake for 12-14 minutes or until biscuits turn golden brown.
- For the butter glaze: In a small bowl, add the butter and stir in the garlic powder, parsley, and salt. Brush mixture onto warm biscuits.
Notes
These were very good! I used sour cream and followed the recipe exactly, but the only issue I had was they were flat. Any ideas? These will be my go-to biscuit.
Make sure you add enough almond flour and pile the dough high.
So good~ have made them 5 times now, once with sour cream instead of cottage cheese (not quite as perfect) ~ they are great, perfect for a soup night dinner!
These were delicious!! My only problem was that they stuck like crazy to the parchment paper. They were basically bottomless by the time I got them off. Any advice on how to fix that?

Delicious! I’ve made these many, many times and they’re a huge hit! I’ve reduced the salt in the butter brush a little, but other than that, I wouldn’t change anything.

I never comment on things, but these were amazing and I’m quite picky! Even my 14 year old son who hates all things keto lived one! Only thing I changed is using (Canadian) cheddar cheese and I used fresh parsley. I used an ice cream scoop left in that shape onto a silicone silpat and they were perfect.
So happy!
These were surprisingly tasty. But of course, anything dripping in butter and garlic is tasty. 😀

The cheese kind of makes the biscuits. You can definitely use another kind.

These are the best thing since sliced bread! I used lactaid cottage cheese, & a thicker cut shredded chedder which I can tolerate they turned out great, I don’t normally like keto breads but I will be making these a lot!

The lactaid brand carries a lactose free cottage cheese. I’ve found it at Walmart.
I know they sell vegan cottage cheese. I’m not sure what else to sub.
These are delicious. Mine made 9 biscuits so am not sure the carb count. I used cottage cheese. They puffed up nicely. I served them with broccoli cheese stuffed turkey tenderloin topped with a little sugar free uncured bacon and organic swiss chard. We had whipped jello for dessert. Nice meal on a cold winter’s day. The best…love these! I cut the recipe in half and it turns out great. I also make them a bit bigger, because they make amazing breakfast sandwiches – just warm one up, slice in half and add a fried egg & maybe a slice of bacon.
For variety, chop up a few pieces of jalapeño in the dough.

I loved the sound of these biscuits and the recipe is so simple, but I am not sure what I did wrong. My biscuits seemed runny when I put them on the baking sheet. They were flat and didnt have much flavor. Advice?
The dough is definitely very wet. If you try to pile them high they bake higher.

I cut the recipe in half (because I live alone and don’t trust myself to eat just one). This worked perfectly. So easy and quick. I also changed the parsley to Italian seasoning.
Half a recipe should make 5, but I wanted a little larger, so made three. They were wonderful! The next morning, I warmed one up and carefully cut it in half. Placed an egg fried in coconut oil in the middle, and it was the best egg sandwich ever!

I didn’t have enough cheddar and used ½ cup grated mexican cheese and substituted ricotta cheese for the cottage and bam! I am praying for strength not to eat all nine. Ok, ok! I’ll stop at three and wait until lunch…lol! great recipe.

These are delicious! I can’t have aged cheeses, so mozzarella went in, and I used the sour cream. I didn’t measure and got 8 biscuits, so that’s on me. Now to just keep myself from eating all of them in one sitting! Thanks!

These are amazing! Subbed cream cheese for cottage cheese (didn’t have sour cream either ) & added slightly more butter. 1/2 tb. Used Mozzarella instead of cheddar. Turned out perfect! Also only got 8 out of the batch. Will make again!

These were delicious! I thought cottage cheese seemed a bit different, but followed the recipe t and they were so good! Then, like a precious reviewer, I subbed mozzarella for the cheddar to use these for breakfast biscuits and cut the calories slightly. They were so good as well, my kids all loved them. Thanks for the recipe, we will definitely be using this as a biscuit base throughout our low carb/keto journey and adjusting the spices and cheese depending on the meal!

I just made them. They are very yummy! But, mine didn’t stay small and puffy like the picture, they flatted out some. I measured out 3 tablespoons for each. I used sour cream instead of cottage cheese.

Pasadena Tx…I did a dollop for biscuit recipe said 3tblsp, I used about 2-2 1/2. When baking the dough of each biscuit spread out to an oval slice of bread. Which, was okay. The taste was delicious. Will also be great for sandwiches. Sold me, especially in the area of putting all ingredients together, preparation time was quick.

Are you at altitude by chance? Did you carefully use the right amount of butter and cottage cheese?
Well I am glad I am not the only person who had flat biscuits. I followed instructions to the letter as well. I live on gulf coast and its chilly today, low humidity but … still not sure why they are so flat. Perhaps my baking powder was too old? I have to say though the taste was still darn good.

I tried this recipe for the first time yesterday and they were delicious! I used my food processor and raw almonds I had previously purchased so that I wouldn’t have to go shopping for almond flour. How much coconut flour would I use?
Every cup of almond flour is equal to 1/4 cup coconut flour. With that being said, I haven’t tried these with coconut flour.
Since finding this recipe I have made them several times. My husband gets excited when he smells the garlic butter going on top. He knows they’re ready!

I wanted a neutral flavored biscuit for biscuits and gravy and sausage biscuits, so I subbed mozzarella for the cheddar. I brushed butter on top rather than the jazzed up version from the recipe. Slap a sausage patty on that thing, and you’d never know the difference. My husband’s downfall has been getting a sausage biscuit during his morning break because there were no keto friendly options. I’m freezing these and sending them with him to work from now on. Finally a bread option that’s not eggy!

These are awesome. Best keto biscuit I have ever tried.
I made this just this morning for myself. If my family wanted to try I made extra. Well, I really enjoyed the flavor. I then placed it on my daughter’s plate who liked it more than I thought. My husband took a bite of mine and I heard, ‘um’ with a nod of the head. He too liked the flavor. I cooked in my air fryer but should have done 11 minutes instead of 14 because they browned more than I wanted. I will definitely make it again when I have a desire for bread.

I have tried MANY low carb biscuit recipes as biscuits are one of my most missed high-carb items. This is BY FAR the best keto biscuit I have made! I don’t know WHY it works so well, but it is AMAZING! Even my husband who doesn’t really do low-carb loved them. THANK YOU!

The basic recipe appeared a lot like most keto based breads but the result achieved was far superior. I substituted coconut flour to a lessened degree which resulted in a thicker consistency. I let the biscuits bake in the remnants of bacon grease (turning them once). Definitely curbed my craving for breakfast breads

These are delicious!! They are light and fluffy and taste amazing! Wow!! I have one question: mine flattened out while baking, so they are more like a cookie or pancake. How do you keep the height?

These are SO GOOD!! So quick and easy too. They are flavorful and satisfying, just like eating the real carbs and gluten which I sorely miss. I have made them several times. I have never had sour cream or cottage cheese on hand, and can say that both plain Greek yogurt or cream cheese work well as substitutes. I did reduce the amount of garlic powder in the glaze by half as my picky son remarked that the flavor was strong, though even he did not actually complain. You should make these without disclosing how protein-rich and low-carb they really are. No one would ever know!

Sure. The whole point it to be Keto for these biscuits but you could use regular flour or try these cheddar bay biscuits.

These biscuits were fabulous! I was pleased with how they raised, their taste and texture.
I made one modification relative to the herb used. I have an abundance of dried oregano which I mixed into the dry flour mixture (about 2 T). Additionally, I added the cheese to the dry mixture to evenly distribute the cheese before adding the dry mixture into the egg mixture. I used the dry oregano again to make the garlic butter glaze.
I served the biscuits with a broccoli cheddar soup. It was a perfect keto pairing.
P.S. The biscuit was great with a keto scramble this morning for breakfast.

These are delicious! Easy & quick to make! The garlic butter sauce is the icing on the cake! My husband said, “This recipe is a keeper! You can make them as often as you want.” He is diabetic so the low carb recipe makes that possible! We ate them with a homemade Beef Vegetable soup. Perfect on this cold & damp Michigan night.
