KETO BLUEBERRY PECAN CHICKEN SALAD

I know I already have a perfectly good Keto Chicken Salad on this site. But I didn’t have one that has sweet tones like some of my favorite chicken salads. This has candied pecans and blueberries for a bite of freshness.

INGREDIENTS:

  • Chicken – rotisserie chicken works well here.
  • Pecans – these are candied with Monkfruit and give a sweet crunch.
  • Blueberries – one of the lower carb fruits out there and give a nice pop of fruity flavor.
  • Celery – for some crunch!
  • Green onions – give is a savory flavor.
  • Bacon – gives it a salty bite.

CANDIED PECANS

I tried making the candied pecans with both Monkfruit and Allulose. The Allulose yielded a sweet pecan but the texture was sticky. The Monkfruit has a slightly cooling effect on the pecans. I countered this with a little butter. That was the winning combination.
