KETO PIZZA
My husband has been doing the Keto diet for years now religiously. He has tried all of the fathead pizza dough recipes out there with cream cheese in the dough and they have all left us wanting.
All the low carb pizza crust recipes were limp and soggy. So soft that there’s no way you could pick it up. The fathead pizza crust could only be eaten with a fork. Same with cauliflower pizza crust.
Finally, he came up with this low-carb pizza crust that has cheese in the crust which makes for a crispy crust. As crispy as you want it to. The longer you cook it this pizza crust recipe the crispier it gets. Top it with your favorite toppings!
We basically have this keto dough recipe memorized because we make it so much.
The size and shape of your pizza is up to you. We like to shape it on pieces of parchment paper with our hands or a rolling pin. My husband prefers a thin crust. I prefer a moderately thicker crust and a little less crispy. Pizza night can be healthy and everyone can add their own toppings.
KETO PIZZA CRUST INGREDIENTS:
- Eggs
- Cottage Cheese
- Melted Butter
- Almond Flour – I haven’t tried this with coconut flour or other low carb flours.
- Salt
- Garlic Powder
- Cheese – mozzarella cheese is traditional. Cheddar would be great too. Usually a fathead pizza dough recipe starts with melted cheese but this version does not.
Add you favorite pizza toppings: Pepperoni slices, low-carb pizza sauce (like Rao’s), olives, sausage, Parmesan cheese, fresh basil, Italian seasoning
HOW MANY CARBS IN THIS KETO PIZZA?
There are 4 net carbs in each serving of this Keto crust. This low carb pizza recipe has way less carbs than regular pizza and satisfies those pizza cravings.
HOW TO MAKE THIS
- Preheat oven or air fryer to 400 degrees and line a cookie sheet or pizza stone with parchment paper.
- In a medium bowl, whisk together the eggs, cottage cheese, and butter. Set aside.
- In a separate bowl, whisk together the dry ingredients: the almond flour, garlic powder, and salt. Add dry mixture to the wet ingredients and stir to combine. Mixture will be wet. Stir in the cheddar cheese.
- Roll ball of dough with a rolling pin between two parchment paper sheets to desired size, thickness, and shape. The dough will be very wet. You can chill the dough in the fridge for about 10 minutes to make peeling the parchment off easier. Peel the top parchment sheet off and bake it on the bottom sheet of parchment on a baking sheet. Bake for 12-14 minutes or until desired level of crispiness. The longer you bake it the crispier it gets!
- Remove from oven and load your pizza however you like with all of your favorite sauces, cheese, and toppings. Bake pizza for another 5-8 minutes or until the cheese is melted. Top with grated Parmesan cheese if desired.

Made this recipe today, and I have to say that it didn’t quite come out as expected. The crust was extremely dry and crumbly, and it was difficult to eat. I’m not sure what I did wrong!!
If it was really dry and crumbly it sounds like you overbaked it. How long did you cook it?
I just made this in my Dash mini waffle maker using a combo of mozzarella, Parmesan and red pepper flakes. It made a wonderful little sandwich and I’m sure the mini pizzas will be good too!

This is AMAZING!!! I cooked it for the guys doing construction on our house and they couldn’t believe it was low carb! My question though is the serving size. The whole thing is the serving? So, 7g of carbs for all of it?? Thanks for the recipe!
No unfortunately there are 4 servings. Almond flour does have some carbs. Glad they liked it!
I’ve baked this recipe before with no issue. Did the same thing today and the dough was stuck to the parchment paper. Which was awesome because this takes a little time to prepare. I just romped it in the trash.
What did I do wrong?
So after you baked it, it was stuck? You could try spraying the parchment. Not sure why it did that.

I’m not sure what I did wrong. I told the crust out quite thin, baked it for 14 minutes and then topped it with sauce, cheese and pepperoni. I baked it for an additional 8 minutes and it’s really flimsy. I’m baking it an additional 8 minutes but not sure this will work. What might I have done wrong?
When you baked it for 14 minutes was it crispy? You should bake until your desired crispiness

Great recipe! I found it easier to put the dough on the parchment paper while on the baking sheet, then smoothing it with an offset spatula to the desired thickness. No messy hands! My friend makes and bottles his own meat style hot sauce for hot dogs, etc. (No sugar. Very popular here in upstate NY). I used that for my pizza sauce and then added the other goodies. Such a yummy treat while fighting all this pandemic weight gain, if I can stop myself from eating the whole thing!

Is it possible to use cream cheese instead of sour cream or cottage cheese? I hate both, but I don’t know if I will even taste them? Have you tried the suggested substitution for the cup of almond flour(1/4 cup coconut flour plus another egg)? I looked at your link after that suggestion but everyone says your recipe is great and the other recipe is very different! Thank you for any help!
You don’t taste either I promise. I have not tried cream cheese or the substitution.
This is the best keto recipe I’ve tried to date! I was thinking that making the dough seemed complicated but I was amazed at how easy it was. I do think I’ll roll it out thinner the next time…..the edges were nice and crispy, but the main part of it was done but not crisp. It tasted wonderful despite that, and I liked it even better than the crust on take-out pizza!
Our son, who is autistic, is in a real rebellious stage right now against keto recipes……we’re all doing keto because he was recently diagnosed with type two diabetes and he needs to lose a few pounds and cut out a lot of his beloved carbs to get his A1c down several points. Anyway, he turned down the slice of pizza I offered him, but later snuck out and ate a whole fourth plus part of another fourth! He also loved your sausage and peppers recipe, and I did let him have his portion served over pasta, (one serving that I carefully measured out before cooking it. He is allowed to have things like that as long as we keep track of his total carb intake daily.)
So, I’m really glad I found your site and all the keto recipes…….I plan on trying a lot of them! Many thanks!!

I made the Keto Pizza recipe and it was delicious. This recipe is a keeper. It took care of my pizza craving. The crust was crispy, and even with the sauce and all the toppings it held up. I will definitely be making this recipe again.

I’ve made many fathead pizza’s and your dough recipe seems to be the best, in my opinion. The only thing that I did different was used sour cream (in place of cottage cheese) and I used about 4 Tbsp of butter (no particular reason, just used the rest of what I had). I flattened the dough into my small oiled baking/cookie sheet, using oily hands. I was very worried that this dough wasn’t going to turn out because it was so wet, just like you noted. But it came out terrific!! Thank you for sharing!!

I wish I could say my pizza crust was crispy, but no it wasn’t. I even baked it for an extra 3 minutes. It tasted fune but no way could the slice hold up on it’s own.

I think it’s important to note that it has been proven that ovens can vary by 50 degrees! So if your pizza crust isn’t crisp enough, please bake it longer. trust me it will get there.

What can you use if you are allergic to nuts ??
Substitute 1 cup of almond flour with 1/4 cup (1 ounce) of coconut flour, and add one egg for every 1/4 cup of coconut flour used in addition to the eggs called for in the original recipe.

I rarely comment on recipes online, but this was absolutely delicious. My husband has tried many keto pizza crust recipes, and we both think this tasted almost as good (if not better) than supermarket frozen pizza dough. It doesn’t have a weird “keto” sub taste like many doughs we’ve tried. Thank you!! The other recipe I tried was the cinnamon pork rinds and oh my god amazing and so quick and simple!!! Can’t wait to o try other recipes from here!

Crust was easy to make and tasted good. Didn’t find it crisper than fathead dough, but then I haven’t had a crisp problem with fathead dough either. I was able to pick up a square slice and eat with my hands—did not need knife and fork. I added a bit of oregano in the dough and when it was baking, it smelled divine. 🙂
My sister made this for us (my husband is diabetic) and it is amazing!! She combined Italian sausage, diced up salami and pepperoni. I’m not normally a “meat pizza” person but it is awesome. We even sliced and froze it to take on a trip in the RV. We thawed it and “toasted” the crust in a pan. It was wonderful! Quite a treat for my husband.

This recipe turned out very well! I didnt have almond flour so i used coconut flour and it still worked i just only had to add half the amount. I think qith coconut flour a little bit of oil would be good as it was slightly dry. The taste obviously didnt taste like a normal pizza but it still tasted really good!
I don’t know who to give Kudos to, But this was delicious, a nice change from fathead dough. I backed up so nicely that I just cut it in squares and put Parmesan cheese on it. Yum. I took a picture but I don’t see anywhere to post it. Anyway, nice job.

How many pieces count as a serving? I cut mine into 8 pieces, so figured 2 pieces would be one…
The recipe makes 4 servings so yes, if you cut it into 8, two pieces would be one serving.

I added 1TBL sour cream, 1 tsp pepper, 1/2 tsp baking powder, 2 tsp garlic powder, 1 tbl oregano. Came out really fantastic. Once baked I moved it off the parchment onto a wire pizza pan. Topped it and baked 10 mins at 400.

Just made it. Very easy wooden spoon single bowl stir. Filled entire cookie sheet. Large serving size. Great to finally have a pizza crust in hand with great crunch. First bake I baked it on bottom rack over 19 minutes then, added toppings and baked another 10. It was grrrrreat!! Thank you !

I’m trying to find alternative (healthier) recipes for for my son and one of the foods I would like to make for him is pizza but he is allergic to nuts and I can’t use almond flour. Do you know if whole wheat flour would work? It would obviously add on carbs but I think it will still be a better option than the traditional recipe.

You can swap Oat Flour or Cassava Flour with basically a 1:1 ratio to almond flour in recipes. Whole-Wheat flour is an option too but you wouldn’t be able to use it alone because of it’s density. For example if a recipe called for 2 cups almond flour and you wanted to swap it, you would have to use 1/2 whole-wheat and 1/2 all purpose flour in order for the recipe to come out right.
Whole wheat flour would not be Keto anymore but may work?
This was AWESOME!!!! The best keto pizza we’ve ever had! We used cheddar cheese in the crust and topped it with Rao’s margherita pizza sauce, ground mild Italian sausage, green pepper and mozzarella. Absolute perfection, thank you! Can’t wait to try your other recipes!!

I made this recipe today and it was (allow me some slang) slammin’. Let me rephrase that…I made it twice — back to back. It was hard to roll the dough using only 1 cup of flour (it still came out great), so I decided to make this pizza again literally right after, except using 1 3/4 cups of flour (that’s 7/4 cups of flour — it seems hard to read mixed fractions on this platform). The first one I made was rectangular like in the photo and the 2nd one was circular.
To be fair, I don’t make/cook things that require me to roll dough. Either way — both came out great and it was easy to put together. I recommend using the brand called Rao’s as a low carb option for sauce. They are low carb and there are a ton of options to choose from. Wish I could post pics. Shotout to Christy!

This is the best pizza I’ve had for keto!!! I made it long and rectangular like the photo and I cut it into 4 and then I cut the 4 into 2 and ate the two as a serving, hopefully that was the correct portion size but man did I wanna eat it all!
This was wonderful. I see that it has 4.5 carbs per serving but how many servings are there. I think I can cut 8 helping and not over eat but it’s so good I’d love it to be divided into 6. With a salad I can live with 8. Thanks

Just YUM!! I accidentally used cream cheese instead of the cottage cheese, and the crust was fantastic! I will try cottage cheese next time. This is going to be a staple in my keto diet!

It makes a half sheet size but you should divide it into pizza size portions.
I’m so Grateful that I came across your recipe today because I really do miss a good pizza.i followed the directions exactly and rolled out the crust very thin (1/4”) on a cookie sheet . It baked up beautifully and held up very well when baked again loaded with toppings. I’ve bookmarked this recipe and will definitely come back to it regularly. This recipe was excellent! I forgot the butter, but it still came out perfectly. You weren’t kidding about the dough being very wet. I didn’t bother removing the top parchment. I went ahead and baked the crust with both parchments, then removed it easily after it was cooked and ready for toppings. Thank you for sharing this recipe!!!
I would give this recipe ten stars if I could. I didn’t roll it out because I’m out of parchment paper, but I did butter my pan and spread it out. We were so thrilled to have pizza with such an amazing crust. The whole family enjoyed it. I also used cashew flour instead of almond flower and it worked great!! It doesn’t take long to make at all! I will use this recipe over and over!

I was looking for a keto dough to use around some gourmet hotdogs but most called for cream cheese (which I didn’t have). I found this and thought that using pizza dough might work. Well – it was absolutely delicious. My daughter took the meat out and just enjoyed this crust with all this cheese. I will definitely make this again – as a pizza.

This crust is fantastic—even without any toppings! The recipe says the serving size is 4, but your pictures show more than 4 “slices”. Are your pictures based on a doubled version? The crust doesn’t look thin, and my crust (a little thinner than pictured) yielded about six 4”x3.5” squares. I’m not going to change a thing the next time I make it (nor the hundredth!); I just want to get a clearer idea of the actual serving size used in the nutritional values. Thank you (and your husband!) for this wonderful recipe!
So the whole pizza showed in the picture is two servings. I just cut them up smaller for easier eating.

The whole recipe is 4 servings. carbs are 7 per serving with 3 fiber per serving so 4 net carbs per serving.

I am not a cook, not a baker, not anything to do with the kitchen. I am a disaster waiting to happen in the kitchen. I have proof.
But (at age 68) I made this Keto Pizza all by myself and it was wonderful!!! And easy by my standards! My husband was impressed and loved the pizza too!!! This is a very good and easy and tasty and delicious pizza. And I did not require a “spotter” as I cooked! This cooking experience was incident and accident free! And my kitchen did not end up a disastrous nightmare that my husband had to clean up! THANK YOU MORE THAN YOU KNOW!!!

My crust was all soggy, even baked it 20 minutes. Followed recipe exactly.
I just made it for the first time tonight and it was perfect! I think if it is soggy then it needs to be first , pressed thinner before going in the oven. and then left in the oven longer

The recipe lists at the top that it has 4 servings for this dough.
So I would either roll it thinner so that your serving size is smaller. I’m not sure how you could reduce calories here…

Coconut flour expands a lot more than almond flour. 3x as much. I haven’t tried it with it.
I made 1 and half of this recipe to make 2 personal pizzas. OMG..This is better than any cauliflower keto or other keto pizza dough..my partner who isnt keto,really liked it as well..this one is a keeper.
