MELT IN YOUR MOUTH CHICKEN RECIPE

This easy chicken recipe is one of those meals that you can throw in the oven in a moments notice with just minutes of prep time.

There are simple ingredients in this easy recipe.

  • BONELESS SKINLESS CHICKEN BREASTS – You could use thighs here but I prefer boneless chicken breasts.
  • MAYONNAISE – This helps keep the moisture when you bake chicken resulting in juicy chicken! Just 1/2 cup mayonnaise for the whole dish.
  • PARMESAN
  • GARLIC POWDER – A teaspoon garlic powder gives this so much flavor.
  • SEASON SALT
  • PEPPER

HEALTHY SUBSTITUTES

You can substitute plain Greek yogurt as a healthier option for the mayonnaise. It is more tart and will not melt as well into the chicken but is an option.

HOW TO MAKE

  1. Preheat oven to 375 degrees F. Place chicken breasts in a baking dish.
  2. In a small bowl, combine the mayonnaise, Parmesan cheese, garlic powder, season salt, and black pepper. Spread a thin layer of the mayonnaise mixture on top of the chicken breasts.
  3. Bake for 30-45 minutes or until meat thermometer reads 165 degrees F. Cook time will depend on the thickness of the chicken breast. Broil for 2-3 minutes to get the topping nice and golden brown. Store leftovers in an airtight container in the refrigerator.

TIPS FOR MAKING THIS SUCCESSFULLY

  • Thin chicken breasts. In order to have the right chicken to sauce ratio, use chicken breast halves that are thin. For best results, if you have a thick chicken breast, butterfly it.
  • Broil for the last few minutes. This makes the cheese get those nice brown spots.

  • 1 teaspoon garlic powder
  • 1/4 teaspoon season salt
  • 1/4 teaspoon ground pepper
