This easy Mexican Pizza recipe is a copycat version of the Taco Bell pizza I used to order all the time. Made with tortillas, refried beans, enchilada sauce, and cheese. This is pizza night meets taco night and a great switch up to Taco Tuesday.

TACO BELL MEXICAN PIZZA COPYCAT

I spent most of my high school days eating Taco Bell because it was inexpensive and tasty. I haven’t been in a while. A long while. The taste is still burned in my mind though and this homemade Mexican pizza tastes just like a Taco Bell copycat.

INGREDIENTS

  • FLOUR TORTILLAS – Some versions use corn tortillas and you can too but I like use small flour tortillas.
  • TACO MEAT – You can use leftover taco meat or make your own with seasoned ground beef or even ground turkey and taco seasoning.
  • REFRIED BEANS – A layer of refried beans holds the tortillas together and give it that classic flavor. You could even use black refried beans.
  • CAN OF RED ENCHILADA SAUCE – This is the sauce and has tons of flavor.
  • MEXICAN CHEESE BLEND – Any cheddar cheese will do.
  • TOMATOES – These add a bright fresh flavor.
  • BLACK OLIVES
  • TACO SAUCE – They sell Taco Bell’s taco sauce at most stores and it definitely makes it authentic.
  • TOPPINGS: Add your favorite taco toppings here. Taco sauce, a dollop of sour cream, red onion, fresh cilantro, or pico de gallo.

HOW TO MAKE THIS MEXICAN PIZZA RECIPE

  1. Brown ground beef in a large skillet. Add the taco seasoning, add water called for on the package, and cook according to the package instructions. Set aside.
  2. Preheat oven to 400℉ and lay six of the tortillas on a baking sheet.beans and taco meat on tortillas
  3. Place refried beans in a small bowl and heat in the microwave for 1 minute. Spread about 1/4 cup of the beans on each of the six tortillas. Top each bean layer with about 1/6th of the taco meat. Add the remaining six tortillas on top of the taco meat.enchilada sauce on tortillas
  4. Brush about 1-2 tablespoons of enchiladas sauce on the top tortilla. Divide the tomatoes on top of each tortilla. Top with about 1/4 cup of cheese.
  5. Bake in the oven for 6-8 minutes or until cheese is bubbly. Remove from the oven, top with olives, and drizzle with taco sauce. Sprinkle with green onions or cilantro and add sour cream if desired. For best results serve immediately.Mexican Pizza
