One-Pan Chicken Enchilada Skillet
This easy One-Pan Chicken Enchilada Skillet can be ready in 10 minutes! Seriously such a tasty Mexican dinner recipe with chicken! Rotisserie chicken is simmered in enchilada sauce and salsa, then sliced tortillas are stirred in cooked until they become nice and soft. Top this one pot meal with cheese and all your favorite toppings like guacamole, sour cream, and green onions.

ONE-PAN CHICKEN ENCHILADA SKILLET

We recently got back from a cruise on the Caribbean and while I could really write five separate posts on the pros and cons of cruises, I will spare you.
I will say however, that one of the unique things about a cruise is that even though there were 8,000 people on our boat, you tend to see the same people over and over again.
The actors in the Mammia Mia play we saw on the boat were also directing a volleyball competition at the pool. The skaters in the ice skating show who were all dolled up the night before were in sweats renting out skates to kids the next day. The gymnasts in the aqua show were lifting weights next to me at the gym and some were running next to me on the track surrounding the boat. The ladies at the Kids Club magically appeared running the carousel at the other end of the boat.
By the end of the week long cruise, it was apparent that everyone working there wore several hats, with skills in all kinds of job fields from server to magician!
What’s my point? If this One Pan Chicken Enchilada Skillet looks familiar it’s because it is. Sort of. I mean it’s kind of the cousin of this One-Pan Mexican Chicken and Rice or maybe the sister of the Easy Beef Burrito Skillet. Similar but oh so different.
Growing up eating beef was kind of considered naughty in my house. My mom was all chicken, chicken, chicken recipes for every meal. Beef was only to be eaten rarely. We probably eat beef once a week but in my experience you all want chicken! I guess it’s just an overall pleaser.
Start with shredded chicken. I love the texture of rotisserie chicken but if you have leftover chicken, by all means use it. I added just a few spices (cumin and oregano) to the chicken.
Then I simmered it with salsa and Old El Paso Enchilada sauce.
Next, add some flour tortillas that have been cut into strips.
When you stir them in they get nice and soft almost like a Mexican dumpling. Top it with cheese and your favorite toppings.
I included sour cream and green onions in the directions not as optional because in my opinion they aren’t.
My family loves this One Pan Chicken Enchilada Skillet! And no joke, it’s ready in under 10 minutes. If you love enchiladas and you love easy meals, this recipe is for you!

One Pan Chicken Enchilada Skillet
Ingredients
- 2 cups shredded rotisserie chicken
- 1/2 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1 (10 ounce) can Old El Paso red enchilada sauce
- 1/2 cup chunky salsa
- 1/4 cup water
- 4 (6-inch) Old El Paso soft tortillas cut into 1-inch strips, (pizza cutter works great for this)
- 1 cup shredded Mexican blend cheese
- 1/2 cup sour cream
- 1/4 cup sliced green onions
- optional guacamole
Instructions
- In a large skillet (12-inch), add the rotisserie chicken. Sprinkle with the cumin and oregano. Ad the enchilada sauce, salsa, and water. Bring mixture to a simmer over medium heat for a couple of minutes to let the sauce thicken and the chicken to heat through.
- Stir in the tortilla strips and sprinkle with the cheese. Remove from heat and let the cheese melt from the heat.
- Top with sour cream (and guacamole if desired) in the center and sprinkle with green onions. Serve immediately.
I used green enchilada sauce and salsa verde, and it was great. Butn6 servings would be tiny. I would say it made 4 at the most.

Saved my life! I just moved and was sick for three days. Empty fridge, mostly, and no time to go grocery shopping. Hadn’t eaten for three days and was starving. Just moved, so kitchen was a disaster. Dumb luck that I had two cups of shredded chicken in the freezer (thank you crock pot), enchilada sauce, and chunky salsa. I also had shredded cheese, sour cream and some sad looking green onions. No guac, but I did have a perfectly ripe avocado.

This recipe came out better than I expected. I used corn tortillas and added 2 cans of red enchilada sauce as well as black beans, corn, and bell peppers. I sprinkled a good layer of cheese on top and popped the whole pan under the broiler for about 3 minutes on low. The cheese was nice and bubbly with just the right amount of browning. Even my picky eaters loved it!

I used green sauce bc we prefer that with chicken and broiled in my cast iron skillet to brown the cheese at the end. I also threw in some pinto beans. The whole family devoured it and I was thankful to have “enchiladas”without getting my hands dirty! Seriously the most simple prep ever. Thank you!!

I combined this recipe with the one pan chicken and rice (made the rice in a rice cooker with enchilada sauce and chicken granules ahead of time), shredded rotisserie chicken, no tortillas but everything else the same as this recipe. so easy and delicious!

This was excellent. I added sliced olives and corn. I might add black beans next time. I served the sour cream and smashed avocado on the side. I will definitely make this again.

I used ground turkey and browned it(I wanted to use ground beef, but decided to save on calories), I also tossed in some black beans and corn that I had left from another meal. Then, followed the rest of recipe exactly. It was delish!

Sometimes I use green enchilada sauce instead of red, and I’ve used rotisserie chicken, leftover turkey, or uncooked chicken that I season with cumin and oregano and brown, then add the sauce ingredients and simmer until done. No matter how I switch it up or follow the recipe exactly, it’s always a big hit with the family. Thanks!

The flavor of this dish was so delicious!!! And it is so fast, easy, and no oven on in the summer heat! Our only issue was the flour tortillas. The consistency was like raw dough, we didn’t like that part. I’m going to make it again with corn tortillas, I think that will be perfect. Thank you!
You should just stir the tortillas in the end just long enough to soften but not get mushy.

Oh my gosh this was amazing!! I can’t say enough! It truly only took 10 minutes!!!! I’m always so much slower than the time listed for a recipe so this is awesome to have a super fast dinner up my sleeve.
Not to mention 1 skillet! And no chopping! And only a few ingredients! I love to cook but with a newborn I often just run out of time. To have a really delicious fast recipe with no cleanup – I’m so grateful for this!

I made this tonight, I had 3 large chicken breasts so I decided to use instead so I cooked those in my instapot for 20 minutes( wanted to make sure they were tender) with 2 cups of water, a tbsp of tomato flavored chicken bullion, some of the enchilada sauce and some granulated onion and granulated garlic. Then took out and shredded. Put chicken and enchilada sauce in skillet and simmered for a lil while then added tortillas. And all toppings we added what we wanted to our plates. And it was very nummy and still quicker than making enchiladas 😁 thanks for the recipe 💜💚🥰

This dish is soooo good!! Instead of using a Rotisserie chicken I cooked chicken tenders then shedded it and a large can of breast meat chicken and added sliced avocado as part of the topping.I will definitely will be making it again!

Had to use frozen chicken breast on hand so I threw them into the pressure cooker and cooked for 15 minutes and let drop on it’s own. Then shredded and the rest is yummy history. It was good and I’d like Mexican rice next time to go along but quick and easy.
This is the best new recipe that my family keeps asking for-I just made it again tonight. I have to double it as I have a hungry husband and four teenage boys! Everyone I have shared this recipe with also loves it and it is so quick & easy to prepare. Sorry it’s hard to know total amount per serving. I just divide it by 6 with my spatula and go from there.
I am an AZ girl too, and I always trust your recipes bc you know what things are supposed to taste like. This is so delicious, and SO MUCH faster than the enchiladas I usually make… but just as good! My old recipe will stay in my notebook for nostalgic reasons, but this recipe will be in our regular rotation.

I made with ground turkey, because its what I had on hand. I liked it, but didn’t love it. It was super quick – came together in about 20 minutes, just before my family got home so we could eat together before I left for work. That was the main thing I was looking for, and for that reason, I will probably make it again (maybe with chicken!). As always, love your writing!

I realize the whole point of this recipe is to make it easy, but what if you didn’t have cooked chicken on hand? Could you cook the chicken in the skillet first and then add the other stuff? Or would that change the dish too much?

Are you concerned these days about using Old El Paso products? Right on the can/or their seasoning packets, it says “Partially Produced with Genetic Engineering”. I MISS Old El Paso products, however we are trying to avoid GMO at our house. Do you, by chance, have a healthier recommendation for creating similar flavor without using a product that may be unhealthy?
