ONE-PAN SAUSAGE AND VEGGIES

First of all can we talk about gnocchi? Most often people prepare gnocchi by boiling it but have you tried pan frying it? It’s fabulous. Crisp potato dumpling outside, soft inside.

This meal is great because it’s so versatile. I used seasonal veggies but really the possibilities are endless.

One-Pan Sausage Gnocchi

INGREDIENTS

  • ANDOUILLE SAUSAGE – This is a highly spiced sausage. If you want something a little milder you can substitute it with any smoked sausage, like kielbasa. You can use any type of sausage. You could also use beef sausage, chicken sausage or turkey sausage if you wanted.
  • BELL PEPPERS – I like to use red bell pepper, orange bell pepper, or yellow bell peppers. Green peppers tend to get bitter when roasted for a long time.
  • ZUCCHINI SQUASH – You can use yellow squash as well.
  • FRESH CORN – Adds a hint of sweetness.
  • OLIVE OIL – To help things to cook.
  • GNOCCHI – This is made from potatoes. Some brands are gluten-free but not all! You can find it next to the pasta at the grocery store.
  • PARMESAN CHEESE – A little Parmesan cheese on top is the best part.

HOW TO COOK CORN ON THE COB

     THERE ARE MANY WAYS THAT YOU CAN COOK CORN AND HERE ARE THE WAYS HOW:

  1. Bring a pot of water to boiling and boil the corn for 3-5 minutes.
  2. Grill the corn over medium high heat for 3-5 minutes.
  3. Keep the corn in its husk (or a damp paper towel) and microwave for 3-5 minutes. It steams the corn.
  4. Cut the corn off the cob and saute in a pan with a little oil for 3-5 minutes.

This One-Pan Sausage Gnocchi and Veggies is a quick and easy meal that satisfies. One-pan and full of vegetables that are versatile!

Ingredients

  • 1 tablespoon olive oil
  • 1 lb andouille sausage, sliced into 1/4 inch slices
  • 1 lb potato gnocchi
  • 2 medium zucchini, sliced into half moons
  • 3 ears corn, cooked and sliced off the cob, (see notes on how to cook corn)
  • 1 red bell pepper, sliced into 1 inch strips
  • grated Parmesan
  • basil for garnish

Instructions
 

  • In a large skillet, heat the olive oil over medium-high heat. Add the sausage and gnocchi and let sit and cook without flipping for 3-4 minutes. Flip and cook for a few more minutes until sausage is brown. Remove with a slotted spoon to a plate and leave about 1 tablespoon of oil in the pan.
  • Add the zucchini and to the pan and start cooking for 2-3 minutes over medium-high heat. Add salt to taste. Remember that the sausage is salty but the zucchini does need some seasoning.
  • After the zucchini has gotten a head start cooking add the corn and bell pepper. Continue to cook for 2-3 minutes. Add the sausage and gnocchi back in to heat through. Sprinkle Parmesan to taste and garnish with basil.
