ONE-PAN SPINACH ARTICHOKE PASTA
I’m someone who already cooks a lot but with the current situation I feel like I’m cooking even more than ever. When you cook a lot guess what follows? Yep. All the dishes. Which is why if you haven’t noticed, I have several one-pan dishes on this blog.
My kids love this meal. Unlike some creamy Alfredo dishes, this one has tons of creamy sauce for an entire pound of pasta. This is comfort food at its best.
HOW TO MAKE THIS PASTA

In a large deep skillet, melt the butter over medium heat. Add the garlic and red pepper and sautee for 30 seconds.

Add the chicken broth, cream, pasta, salt, and pepper to the pan. Bring to a boil, cover, then reduce heat to medium-low. Simmer pasta at medium-low heat for 15-20 minutes stirring every once in a while, until pasta is tender.

Stir in the cream cheese and Parmesan until cream cheese is melted and combined. Add the spinach and artichokes. Cook for just a few minutes until the spinach wilts down.
- You are done! Remember the longer you simmer the sauce the thicker it will be. Also, when you take the pasta off the heat the sauce will thicken up more.
VARIATIONS
Sure this is a spinach artichoke pasta but really you can put anything you want in here or nothing and just have it be a creamy Alfredo pasta. To be honest, my kids don’t love the artichokes but the adults sure do.
OTHER THINGS YOU CAN ADD:
- Use kale or arugula instead of spinach.
- Add some sundried tomatoes.
- Add a can of drained diced tomatoes.
- Add some fresh basil.
- Sautee some mushrooms and add them in.
- Add broccoli, asparagus, or zucchini.
- Sautee some onions and add them in.
- Use 1 teaspoon garlic powder instead of the minced garlic.

One-Pan Spinach Artichoke Pasta
Ingredients
- 1 tablespoons butter

- 4 cups low-sodium chicken broth, (I use Better Than Bouillon chicken base)
- 2 cups heavy cream
- 1 lb penne pasta, (or any short pasta)
- 1 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 4 ounces cream cheese, softened
- 1 cup grated Parmesan cheese
- 4 cups spinach leaves, chopped
- 6 ounces marinated artichokes, drained and chopped

This is a fantastic recipe, I’ve made this with 2% milk in a pinch, and thicken it with cornstarch.

delicious! didn’t have cream cheese so had to leave it out, and used whole wheat spaghetti since that’s what we had. added a little lemon and basil at the end. BF loved it. thanks for the inspiration!

We make this right after lunch, let it cool down, and the sauce can thicken up, then we heat it up for dinner. It is so good!

This is just crazy good! There are only 3 of us and this makes a ton. Super simple. Going to add chicken to the next batch. Just enough of a kick with the crushed red pepper. Packaged up leftovers gave to a friend tonight. She sent me a text a couple of hours ago and was like, wow….this is awesome! Yummy!!!!

This sounds delicious but can it be made dairy free? Plant based milk and plant based cream cheese? It comes up under vegetarian but the same ingredients. What do you think?
