ONE-POT CREAMY SAUSAGE AND TOMATO TORTELLINI
Yesterday I was facetiming with my sister-in-law and she was telling me how she made my Marinated Caprese Salad for a potluck at work. The only changes she made was that she added cheese tortellini to it.
I gasped, “Tortellini? Who do you think you are, Garth Brooks?!”
Then I thought, “Why didn’t I think of that?”
Garth Brooks is notorious for adding tortellini to everything. He’s known for his breakfast bowl recipe which…you guessed it, has tortellini in it.
Who doesn’t like tortellini? Cheese filled tortellini nonetheless.
As with most great dinner dishes, this One-Pot Creamy Sausage and Tomato Tortellini came about on rushed dinner night where I needed something fast.
DO I NEED TO COOK THE TORTELLINI?
The great thing about this dish is that the tortellini cooks right in the same pan as the rest of the ingredients.
HOW TO MAKE ONE-POT CREAMY SAUSAGE AND TOMATO TORTELLINI
- In a large skillet, cook the sausage, onion, and garlic.
- Add the tomatoes, cream, chicken broth, and tortellini. Cook until tortellini is tender. Add the spinach leaves and cook until wilted.
- Stir in the basil and Parmesan. Serve.

One-Pot Creamy Sausage and Tomato Tortellini
Ingredients
- 1 tablespoon olive oil
- 1/2 lb ground Italian sausage
- 1/2 white onion, diced
- 4 cloves garlic, minced
- 1 14.5 ounce can diced tomatoes, undrained
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- 1 teaspoon kosher salt
- 1 20 ounce package refrigerated cheese tortellini, uncooked
- 3 cups spinach leaves
- 1/4 cup chopped basil
- 1/4 cup Parmesan cheese
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the sausage and onion and cook until sausage is no longer pink. Add the garlic and cook for an additional minute.
- Add the full can of tomatoes, cream, chicken broth, salt, and tortellini. Stir to coat and simmer over medium heat covered until tortellini is cooked through about 5-7 minutes. Add the spinach leaves and cook until wilted and sauce has reduced.
- Stir in the basil and Parmesan. Serve.
Can I substitute hamburger or maybe half sausage and half hamburger. Not a huge fan of sausage. And there’s another similar recipe using cream cheese in place of heavy cream! 🤷♀️

Excited to try this tonight! (I just bought your cookbook after a huge success last night with your One Pot Cheesy Chicken Broccoli and Rice! My picky eaters loved it! They actually love raw veggies (carrots, spinach, cucumbers, romaine lettuce, etc). It’s a texture thing because they like crisp green beans. Would it taste odd if I use raw spinach instead of waiting til wilted? When would you recommend mixing it in to keep it from getting too soft?
If you want it barely soft stir it in right before serving and the warmth will soften it.
Can this be frozen?
I have not tried but I don’t see why not.

Kale just needs a few minutes longer and you can use it!
Had this tonight for dinner, was a bit concerned that I added too much chicken broth as I had a thin soupy texture, then it clicked in that duh, the cheese.

What if you can not find refrigerated tortellini? Could you use frozen? If so would you need to cook it first?
Oh yes! Frozen is totally fine and you can just throw it in there.Might have to cook a tiny bit longer.
