Peach Crumb Bars are sweet peaches with a soft crust. The peaches are tossed in lemon juice and almond extract for a bright flavor. This is the perfect summer dessert!

Peaches and I have had a rough history. I don’t think it was until last summer that I really gave them another go.
They were just so beautiful in my grocery store, straight out of the Garden of Eden, that I had to.
Juice running down your chin, those peaches from Publix were divine! Which led me to made this Peaches and Cream Pie and this Easy Peach Cobbler.
CAN I MAKE THESE AHEAD?
I wouldn’t suggest making these too far ahead of time because the filling will soften the crust. The day of or the day before is fine.
CAN I USE OTHER FRUIT?
Sure! You can use apples, blueberries, raspberries, strawberries, or blackberries.

Peach Crumb Bars
Ingredients
Crust:
- 3 cups flour
- 1 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 cup unsalted butter
- 1 large egg
- 1 teaspoon vanilla extract
Peaches:
- 5 cups peaches, peeled and diced
- 1 tablespoon lemon juice
- 1 teaspoon almond extract
- 1/2 cup sugar
- 1 tablespoon cornstarch
- 1/2 teaspoon cinnamon
Instructions
- Preheat oven to 375 degrees and grease a 9x13 inch pan.
For the crust:
- Whisk together the flour, sugar, baking powder, salt, and cinnamon. Cut in the butter with a fork until mixture is crumbly. Mix in the egg and vanilla. *Note: If you're using a food processor you can just add everything to the food processor and pulse until crumbly. Then add in the egg and vanilla and process until combined.
- Reserve 2 cups of the crust mixture and press the remaining mixture into the prepared pan.
For the peaches:
- Toss peaches with lemon juice and almond extract. Whisk together the sugar, cornstarch, and cinnamon. Toss to coat.
- Pour peaches over the bottom crust. Sprinkle reserved dough on top of peaches.
- Bake for 35-45 minutes or until topping is lightly browned. Cool completely and cut into bars.
Terrible recipe that doesn’t require the butter to be melted ! Therefore the “dough” gets stuck. I had to add another egg and some moisture to the dough.
Can you freeze these?
YES!
Amazing! Everyone loved this. I did make a few changes. I used 4 cups of peaches, 2 cups of strawberries. I also added coconut to the pastry and I only had salted butter…which made for really nice balance between sugar and salt. I will be making this many times. Thank you!

Could you use frozen, frozen peaches, frozen apples, frozen blueberries and if so, what would be the difference as far as soaking would have you because you would have all the sauce and everything pretty much with them
Yes that’s true. I would still add the cornstarch to thicken up the liquid.
I sent the two batches of these bars to my husband’s work with a sign saying I was testing a new recipe. I had pieces of paper for comments. My husband sneaked peeks of people trying them. No one ate them fully and the few papers folks filled out where no complementary. Common comments: tasteless, dry, not enough salt, etc. Well that’s three hours of my life I’ll never get back including wasted ingredients. Also, they look nothing like the picture.Â

Great recipe! The bars are relatively quick to make and they’re delicious. I’ve made the recipe twice — once for a potluck and once for company — and people requested the recipe both times. Personally, I like the bars best when served cold — and I offered an optional butter-based hard sauce on the side each time.
