PECAN CHEESECAKE PIE

Today is Pi day. March 14th? 3.14? Did I lose you? 3.14 is the digital reading for March 14th and constant for the symbol Pi. Which is why I’m sharing this Pecan Cheesecake Pie.

It also happens to be the heart anniversary of my sister-in-law Kimi. Five years ago, after a long time of feeling horrible and waiting for a new heart, she got the call that she had a donor match. It was an answer to prayers. It’s a day we celebrate Kim’s new chance at life while remembering and honoring her donor.

Modern technology is amazing. The fact that heart transplants are even possible is a miracle in itself.

We are grateful for Kimi and her new heart. One year the kids and I made this Banana Cream Pie and another year we made this Lemon Pie.

So today is all about pie. What’s your favorite kind of pie? To be honest, my favorite pie ever is this Chocolate Chip Cookie Pie. Which isn’t surprising at all because I cannot leave a cookie alone. Like physically cannot stop eating them.

You know what’s better than Pecan Pie, Pecan Cheesecake Pie! You think you’re about to eat a just a regular pecan pie and then you cut into a beautiful cheesecake layer. Yassssss!

Instructions
 

  • Preheat oven to 350 degrees.
  • Whisk topping ingredients together and set aside.
  • In a medium bowl using a hand mixer, mix cream cheese, sugar, salt, vanilla and egg until smooth. Pour mixture into pie shell. Top with chopped pecans. Pour topping over pecans. Bake for 40-45 minutes or until center is set. 
  • Let pie cool completely before serving.
