I know it’s hard to believe with everything I post here but I do really eat healthy most of the time. But when I’m off the wagon, I’m offfff the wagon if you know what I mean.
My husband has been researching carb cycling. Basically, you eat healthy foods but you alternate your low-carb and high-carb days.
Sounds fun right? The high-carb days it is. If you’re imagining fries, chips, and lots of bread…errrhhh. Stop right there.
The high-carb days consist of more grains like quinoa, whole-wheat pasta, or rice.
Just picture me making these Red Velvet Cake Mix Cinnamon rolls while my husband is in the other room on MyFitnessPal calculating his macros for the day.
I’m a modern day torture machine in a little package.
Have you ever made cake mix cinnamon rolls? The real benefit of making cake mix cinnamon rolls is that you only have to use about half the ingredients since most of them are in the cake mix.
I’ve had cake mix cinnamon rolls and they’ve never been the texture that I want. These, however, were super tender and soft.
It’s not a typo. There are no eggs in this recipe.
The filling has softened butter, brown sugar, and cinnamon. Not as much cinnamon as these Cinnabon Copycat Rolls because I didn’t want to overpower the red velvet flavor.
Red velvet cinnamon rolls are just begging for cream cheese frosting which I can make in my sleep because I’ve made it so many times.
Spread it on when the rolls are warm so that the cream cheese frosting can seep in all the crevasses. When you cut into the roll it’s breathtaking.

Red Velvet Cake Mix Cinnamon Rolls
Ingredients
- 1-1/4 cups warm water, (between 120° to 130° - just warm to touch)
- 1 (1/4 ounce) package active dry yeast (2 1/4 teaspoons)
- 1 (15.25 ounce) package red velvet cake mix
- 2 to 3 cups all-purpose flour
Filling:
- 1/2 cup packed brown sugar
- 2 teaspoons ground cinnamon
- 1/4 cup butter, softened
Frosting:
- 4 ounces cream cheese, softened
- 1/4 cup butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- In a small bowl, proof the yeast by combining the water and yeast. Let sit five minutes to proof. It should be foamy and bubbly. If not your yeast is dead.
- For the rolls: In a large bowl, combine cake mix, 2 cups flour and yeast mixuture. Beat for 2 minutes. Mix in enough remaining flour to form a soft dough and so that when it's mixed it starts to pull away from the side of the bowl. Knead with a stand mixer or by hand about 1 minute. Place in a greased bowl, turning once to grease the top. Cover with plastic wrap and let rise in a warm place until doubled, about 2 hours.
- After dough has risen place dough on a lightly floured surface; punch down dough and roll dough into an 18x10-inch rectangle with a rolling pin.
- For the filling: In a small bowll, mix brown sugar and cinnamon. Set aside. Brush dough with softened butter and sprinkle with brown sugar mixture.
- Starting with the long side, roll up the dough jelly roll style. Cut into 12 slices and place in a greased 13x9-inch baking dish. Cover with a kitchen towel and let rise until doubled, about an hour.
- Preheat oven to 350°. Bake rolls 15-20 minutes or until rolls puff up and just start to brown.
- For the Frosting: Beat cream cheese and butter until fluffy. Add the powdered sugar and vanilla and mix slowly until combined. Beat until fluffy.
- Spread frosting over warm rolls.

While it did take some time, these came out great! I rationed out adding the flour until it separated from the mixing bowl, then used the remainder to flour my rolling surface.
I did add more butter, sugar, and cream cheese to the overall recipe because my family prefers things more decadent. That ended up working in our favor because the flavor balance wasn’t too sweet at all! I’d recommend adding things to your sight and taste preferences. Great with coffee or ice cream.
Also, they do harden if left out, but quick pop in the microwave makes them a good way to start your day. Will be trying more cake box flavors.
Well I’m trying this …… only thing I would do differently next time is just mix/knead the dough with my hands and not a mixer. It’s to messy for me anyways and the batter/dough went into the hand mixer thing and it’s tough to clean lol. Anyhow I’m waiting my 2 hours to raise (I only had pizza dough yeast at home and I looked it up, it Saud basically the same thing so hopefully it works.

Made these yesterday. Dough was super sticky and wouldn’t you know I ran out of flour. Stuck dough in fridge over night. Had a light bulb this morning and used some strawberry cake mix. They rolled out nice.
My only question is the way the recipe is written it sounds like you add the butter, brown sugar to the dough? Is that not the filling?
Also how far apart on the pan. I put them rather close and lost the shape since I made them hearts

My dough didn’t rise after 2 hours & not even in the pan rolled out. Phooey. It was a packet brand new from the store….
They don’t rise very much but they should rise. Could your yeast be old or was your water too hot or cold?
Can the red velvet cinnamon dough be made the day before?
I haven’t tried that but I have let them rise overnight.

I am in the middle of making mine and I had a hard time getting 12 nice round pieces. The ends were different sizes. Also, they have been in the 13×9 pan fora bout 45 minutes and haven’t seemed to double or increase in size at all. Any thoughts?

Make sure they are in a warm place. When you are rolling out the dough it’s important to roll to the ends so that the ends are not smaller in thickness.
They don’t look they raised very much if you can get 12 rolls in one pan,
There’s not a ton of dough so that’s relative.

I’m sure it can. Just give it enough time to rise or let them rise overnight.
I am a novice baker dad and tried this recipe but could not get as many rolls as you did and not as large. I thought it might be because the yeast wasn’t activated properly so tried to do that and then add to the mix and got the same result. The mix itself was a bit gooey and had to add some more flour when rolling to keep from sticking. What am I doing wrong and how do you get such large rolls like in the picture? My wife still says they are great and her mom who likes red velvet anything loved them too. Thanks!

Yes, cinnamon rolls can get a little firmer when cool.

You will need to add between 2 and 3 cups of flour. Just until the sides pull away from the bowl. I use around 2 3/4 cups.

Nope. You just add the mix with the yeast and flour.

They’re almost too easy.
I make overnight rolls for Christmas, let the dough rise, shape and slice, put in the refrigerator, take them out in the morning for about an hour to rise further. You state to cover and let rise over night, is this correct? I use a cake mix as well.
This recipe does not need to rise overnight but I’ve used the method you stated for my other rolls and it works well too.
Is there a favorite brand of cake mix to use for this recipe as different brands have different amount of flour that will effect the overall result

Can you make them ahead and freeze them? At what point would you freeze?
I would freeze after you shape the rolls. Then thaw and rise when ready to bake.

Thought I’d make these, then while making them figured out you need to spend 3 hours letting them rise! Next time I’d prefer to prep ahead so that they’d actually be ready for breakfast time, instead of a late lunch. How do I go about that?? I’m not much of a baker other than from boxes, so I’m not sure how to go about prepping something that needs to rise. Am I able to everything up to slicing them and allow them to rise overnight? Or should I make the dough and while it’s rising initially set it overnight and add the brown sugar/cinnamon and slicing for the morning? Thanks!
I would make them up to slicing and let them rise overnight as sliced rolls (covered).
Tips for making ahead of time to stick in the oven Sunday morning?
You can definitely prep them ahead of time. I would let them rise them put them in the oven.
I’m waiting to make this for Valentines Day morning, but not anticipating getting up 3 hours before the kids are up (7am) – what are your thoughts on going up to step 5 and then leaving out overnight to bake in the morning?

Let me get this right; you added an extra 1 3/4C of flour, making the total amount of flour would be 3 3/4C – 4 3/4C? or is the total amount you used 2 – 3C?
It sounds right. I make a copycat of Cinnabon and it calls for 4 cups of flour
