I feel like there’s been a lot of talk lately about how online relationships are not real and how we’re replacing real human connection with fake online friendships.
Okay, this is partly true. If you’re texting your husband while he’s sitting next to you, you may be suffer from this syndrome.
Here’s where I’m coming from. I live far, far away from everyone. I’m in southeast Florida thousands of miles away from family and friends.
I have no choice but to communicate via technology. And even if it might not validate actual communication for some, it’s all I have.
Even in the blog world I have made friendships with other bloggers online that are years long.
I have no doubt in my mind that if I truly needed help or a friend to talk to, I could absolutely call them in a moment of need.
We know each other’s faults, our kid’s quirks, and they know that if there’s a cookie in a 20-mile radius of me I will sniff that sucker out.
I refuse to let people take those relationships away from me and tell me they mean nothing.
A couple of months ago one of our fellow bloggers Joan from Chocolate, Chocolate, and More passed away suddenly. It was shocking and so sad as she left three children behind.
She was very involved in the blogging community and even though she was busy with her extremely successful blog she would often take the time to comment on mine.
Her blog continues to live on with the help of her family and I can’t help but think what a blessing her blog is to have for them – a journal of her life over the years.
Joan has a S’mores Cookie Bar recipe that I’ve had pinned since 2013. I wanted to make them but felt a little weird after she passed doing so.
Recently, as I was reading through her recipe, I stopped mid-sentence.
She starting talking about she was inspired from The Girl Who Ate Everything to make these S’mores Cookie Bars. Me! She was talking about me! How crazy is that? It was as though she was telling me from heaven that it was okay to make her bars and was giving me her blessing. I started tearing up.
Now I know I already have S’mores Cookies and S’mores Bars on my blog. They are both scrumptious in their own way. But these are S’mores Cookie Bars – completely unique in their own special way.
They are made with a sweet graham cracker crust, cookie dough with marshmallows folded in, and topped with Hershey bar squares for that distinct s’mores taste.

S'mores Cookie Bars
Ingredients
Graham Cracker Crust:
- 1 3/4 cup graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup butter, (8 tablespoons), melted
Cookie Dough:
- 2 cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¾ cup unsalted butter, melted and slightly cooled
- 1 cup packed brown sugar
- ½ cup granulated sugar
- 1 tablespoon vanilla extract
- 1 egg
- 1 egg yolk
- 1 1/2 cups semisweet chocolate chips
- 1-1/2 cups mini-marshmallows - frozen
- 2 (1.55 oz) Hershey chocolate bars
Instructions
- Preheat the oven to 350 degrees F (165 degrees C). Place marshmallows in freezer if you haven't already (they don't take long to freeze). Spray a 9x13 baking dish with cooking spray.
- For the graham cracker crust: In a medium bowl, combine the crumbs,sugar, and butter until combined. Press into the prepared baking dish.
- Sift together the flour, baking soda and salt; set aside.
- In a medium bowl, cream together the melted butter (make sure it's mostly cooled), brown sugar and white sugar until well blended. Beat in the vanilla, egg, and egg yolk until light and creamy. Mix in the sifted ingredients until just blended. Stir in the chocolate chips and 1 cup of the frozen marshmallows.
- Scoop dough on top of the graham cracker crust and gently press in an even layer. Don't worry about filling the pan too much - the dough will cover all of it as it bakes. Sprinkle remaining 1/2 cup of marshmallows on top slightly pressing in.
- Bake for 18-25 minutes or until top begins to get touches of golden brown. Make sure you bake until the center is set and not jiggly. They will continue to firm up after cooling so be sure not to overbake.
- After bars are done baking, remove pan from oven and let sit for about 5 minutes then carefully place broken candy bar pieces on top. Let cool completely before cutting into squares.
I don’t even have to taste these to rate a “5”! I am “nuts” I’ve S’mores and can hardly wait to bake these for my grandkids!They will be NUTZ too‼️♥️

I have made these a few times and they are the best! A total crowd pleaser and I was just requested by my coworkers to make another batch. One thing I have noticed is the graham cracker crust doesn’t quite stick together, making the bars a bit crumbly on the bottom and losing a lot of the crust in the cutting process. Is this how they are supposed to be or is there anything I can do to make them stay together? Thank you so much!

I love the ingredients of this recipe, but it hard to get graham crackers or hersheys in the uk. So I’m going to try it with biscof biscuits (cookies) and cadburys new darker chocolate bar. Then I might try it with Mcvities biscuits and if I can get it Hershey’s . I’ll let you know but I’m almost positive this wonderful recipe from chocolate chocolate will taste great however I make it. I made these bars yesterday and they turned out PERFECTLY. My oven cooks quickly as well, so 20 minutes was the perfect cooking time. The bars were so chewy, and absolutely DELICIOUS – everyone loved them. Definitely saving this recipe for the future. Exactly what I expected 🙂 Thank you!

I just made these and I will admit I’m pretty sure I overbaked a little. They were probably in the oven around 30 mins. They taste good but they look nothing like the ones in picture I think that’s why I overbaked I was expecting a different look. I had a question about the indregients. Is the vanilla extract measurement really a tablespoon? I thought it seemed to be a bit much so I only added about a teaspoon. Also I froze the marshmallows but they seemed to warm quickly when I mixed them into the batter and settled more on top so I was glad I only added some on top to half of the pan. I assume this is normal and since marshmallows tend to rise to the top. Could this have been because the marshmallows weren’t frozen enough? I also guess this is why I didn’t get the same appearance as the ones pictured. Any advice on those two questions would be helpful. I’d like to make this again and have it turn out more like what is pictured.
The tablespoon of vanilla is right and it gives it great flavor. The dough isn’t terribly thin so mine were incorporated through out. It does sound like they were overbaked. I don’t think that the marshmallows being frozen or not would affect it as I’ve done it without them frozen.
These bars are delicious! I have made them twice now and anyone who tries them immediately asks me for the recipe. However with making them both times I have found them to be jiggly and raw in the center if I only bake 15-18 minutes in a 9×13 pan. I am one to not overtake things and love soft cookies, but I felt the recipe needed more baking time added. I baked them for 35 minutes and they seem perfect! Still plenty soft on the inside!

I am so sad to hear about Joan’s passing. I found her smores cookie bar recipes years ago when I want to make a spoof of Insmonia’s smores cookie. The are completely different from Insomnia’s but so absolutely delicious in their own right that they became a regular request from my family and we even renamed them as Smookies.

Cutting eggs in half is tricky. You could just use one whole egg and it will work fine.
