SPAGHETTI SQUASH
This is one of our staples that we eat all the time. Replacing your noodles with spaghetti squash is a great way to cut calories and to sneak some veggies for your kids. Every since the first time we made this we rarely made the noodle version spaghetti.
WHY IS IT CALLED SPAGHETTI SQUASH?
Spaghetti Squash is a pale yellow, oblong-shaped winter squash that was named because of its stringy insides, which, when cooked turns into yellow-gold spaghetti-like strands.
CUTTING THE SQUASH
The hardest part of making this is cutting the squash in half. It helps to have a sharp chef’s knife to cut the stem end. You need a sturdy surface. It helps to place a damp paper towel underneath so the squash doesn’t slip.
HOW TO COOK
There are a few ways to cook these but my preferred method is to bake.
-
Preheat oven to 400 ℉.
-
Cut spaghetti squash lengthwise with a sharp knife and scrape out seeds.
Pierce with a fork. Drizzle with a little olive oil to lightly coat. Sprinkle with salt, pepper, Italian seasonings and garlic salt (if desired) to your personal liking -
Place the squash halves cut side down on a baking sheet.
Bake for 35-50 minutes or until fork tender. Cooking time will depend on the size of your squash. You don’t want it to be crunchy or soggy when you scrape it out. Al dente is the best texture. Once cooked, let cool for a couple minutes then scraped out the squash with a fork. Serve with spaghetti sauce or your desired topping.
PRO TIP
Don’t overbake! If you cook spaghetti squash too long it will get mushy. I prefer an al dente spaghetti squash.
HOW TO SERVE SPAGHETTI SQUASH
There are many ways to serve this but my favorite way is as a replacement for spaghetti with meat sauce on top.

i used to jab holes in the squash and stick it in the microwave. baking is way better. baking allows for the seasonings to flavor it better. thanks! love the site. can’t wait to try the peanut butter “cheese ball” 🙂
Your spaghetti squash recipe was my favorite one that I’ve tried. Unfortunately lately when I visit this web page to get the recipe it’s covered by a recipe for Kimi’s Parmesan chicken. Is there anyway you can fix this so I can get the recipe again? Thanks.
Megan,
Thanks! I fixed it. Sorry!
Thank you so much!
Making this tonight! Hope it’s hearty enough to fill my fiancé 🙂
I just want to say thanks for this! Saw your recipe listed on OAMM and had to try it – it was so yummy! My family enjoyed it, too. 🙂
