Spinach, Feta, and Orzo Salad
This past week we had so much rain here in Florida that everything flooded. My street had water knee deep and cars were stalling out left and right. I tried dropping my son off at the bus stop only to discover it was three feet underwater.
Being the responsible parent I am I let my kids run through the water and try riding through it with their bikes. We even had neighbors kayaking down the street.
Then I realized how disgusting the water was as it had basically washed everything on land…into the water (hello feces and pesticides). Not to mention we spotted a water snake and there were rumors of a gator a street over.
Oh Florida. I’ve never been more surprised by Mother Nature than in my time here in Florida.
Now we are dealing with mosquitoes because of all of the sitting water. Hell must be filled with mosquitoes. I’m sure of it. Because I can’t think of one thing more tortuous than a swarm of mosquitoes sucking your blood. We’re talking Ten Commandments plague style happening around here. It’s awful.
Summer is the season of BBQs and potlucks. Obviously we’re holding off on any kind of outdoor gathering until the mosquito situation gets wrapped up.
This Spinach, Feta, and Orzo Salad is really a bright addition to any BBQ. It’s half salad, half pasta so you can’t feel too bad about it.
Spinach, feta, orzo, pine nuts, onion…with a balsamic dressing. It’s crunchy, nutty, salty, and salad-y (totally a word), all in one.
Can this be made ahead of time?
Yes, add the vinaigrette about an hour before serving.

Spinach, Feta, and Orzo Salad
Ingredients
- 1 (16 ounce) package uncooked orzo pasta
- 1 (10 ounce) package baby spinach leaves, finely chopped
- 1/2 pound crumbled feta cheese, (about 2 cups)
- 1/2 red onion, , finely chopped
- 3/4 cup pine nuts
- 1/2 teaspoon dried basil
- 1/4 teaspoon ground white pepper
- 1/2 cup olive oil
- 1/2 cup balsamic vinegar
Instructions
- Cook orzo in salted water al dente according to package directions.
- Drain and rinse with cold water.
- Transfer to a large bowl and stir in spinach, feta, onion, pine nuts, basil and white pepper. Refrigerate until serving. Toss with olive oil and balsamic vinegar before serving but not too far ahead of time.

I have been making a close version of this recipe for years but this one is much easier and is delicious!
I like toasting the pine nuts first and I also add Kalamata olives. I think it lends itself to creativity with what you like, have on hand and how much time you have to put it together.

This was really tasty but the spinach took a long time to chop – next time I think I will use a food processor!! Did you make it with regular balsamic vinegar or white balsamic vinegar? I used regular and my salad definitely ended up darker as a result. Delicious though!

I made this for Easter which I spent with friends and family and everyone loved it. The host of the Easter get together loved it so much she asked for the recipe. I decided to make it a couple of weeks later for a potluck at work and again it got great reviews. This will definitely be a recipe I will make many times over

This is yummy! My husband doesn’t like pasta salad and loved this. I didn’t use as much oil and vinegar. I added a bit of fresh lemon juice and about 2 tablespoons each of dried raisins and blueberries. Thanks for such a delicious and light recipe.

This is such a great recipe! Thank you. Perfect for when the it’s too hot to cook. Having this ready in my fridge during a mini hear wave in the PNW was a game changer. I had to cut the recipe in half since it’s only two of us. Still plenty to last a few days. I toasted the pine nuts as mentioned in another comment. I also used arugula as well as the spinach and added some grape tomatoes. And keeping the dressing separate to keep the salad from wilting too quickly. So delicious!!

Toast the pine nuts for better flavor. Also, I just add in approx equal amounts of olive oil & balsamic and adjust to taste. It lasts at least 3 days all mixed together in the fridge before the spinach gets wilted. Makes a great lunch/dinner on a hot summer day!

I also add sliced or chopped black olives and a seeded and diced cucumber for crunch. Very popular dish for parties and picnics.

Does this salad last well for pre-made lunches?
The dressing causes it to wilt so you would have to have the dressing on the side.

The only thing that works great with mosquitoes is organic garlic oil spray. Trust me, we live in the mosquito capital. It’s usually called Mosquito Barrier spray.
