BYU Mint Brownies
BYU Mint Brownies are a rich brownie dessert with creamy mint frosting and chocolate topping. The original recipe is made famous by the BYU creamery.

MINT CHOCOLATE BROWNIES
My husband John played football for Brigham Young University several years ago. BYU gave the football players around $35 a week on their student cards to buy food on campus or at the local Creamery store. The Creamery had a burger and shake joint on one half of the store and grocery store on the other half.
The deal was they had to spend their money by Saturday night or it was wiped clean off their card. So every Saturday night the Creamery was full of football players trying to use the last of their money. Sometimes John would just buy burgers for everyone that was with us or we would buy $30 worth of these BYU brownies sitting in the bakery case to take back to our apartment and eat while we hung out.
In Utah, these are the famous BYU mint brownies. I had to post them because they are GREEN and have a mild mint flavor. They are rich fudgy brownies. One will do ya. I just changed a couple of things in the original BYU mint brownies recipe: I used butter instead of margarine and pecans instead of walnuts. They brought back a lot of memories…
BYU Mint Brownies
BYU Mint Brownies are a rich brownie dessert with creamy mint frosting and chocolate topping. The original recipe is made famous by the BYU creamery.
Ingredients
Brownies:
- 1 cup butter
- 1/2 cup cocoa powder
- 2 Tablespoons honey
- 4 eggs
- 2 cup white sugar
- 1 3/4 cup flour
- 1/2 Tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup chopped walnuts or pecans
Frosting:
- 10 Tablespoons unsalted butter, softened
- 4 ⅔ cups powdered sugar
- 2 Tablespoons light corn syrup
- 1/4 cup milk
- dash of salt
Mint Icing
- 1/2 teaspoon peppermint extract
- 1-2 drops green food coloring
Chocolate Frosting:
- 1/3 cup cocoa
Instructions
- Preheat oven to 350 degrees. Melt butter and mix in cocoa. Allow to cool. Add honey, eggs, sugar, flour, baking powder, and salt. Mix well. Add nuts. Pour batter into a greased or parchment paper lined 9-by-13 baking pan. Bake at 350 degrees for 20-25 minutes. Cool completely.
- Prepare frosting: In a medium bowl, beat butter, powdered sugar, corn syrup, milk, and salt on low-speed until combined. Beat until fluffy. Add more milk as needed until frosting is thinner than cake frosting. We will now divide the frosting in half and make one mint and one chocolate. Take half of the frosting out and place in another bowl for the mint frosting. The frosting remaining in the bowl will be the chocolate frosting.Mint frosting: Stir in the peppermint extract and green dye by hand or with a mixture. Spread mint icing over brownies. Place brownies in the freezer for a short time to stiffen the icing (very important step). Remove from the freezer and carefully add a layer of chocolate frosting.
- For the Chocolate Frosting: Add cocoa. Mix until smooth. Spread chocolate icing over mint frosting. Refrigerate until firm. Cut into squares and serve.
Love those Le Creuset dishes- I have some of their loaf pans in red and not only do they look fabulous but they are so great to cook with. I grew up with my mom always saying how good those byu brownies were and got to enjoy them myself when I went there. Oh man…LOVE THEM!!! Thanks for sharing the recipe. yeah I am the first one. I love the mint brownies. if I would have known that fun fact when I was younger and single, I would have hung out at the creamery more often on saturday nights.
