WHITE BEAN AND SAUSAGE SOUP

Spring is almost here. I can feel it in the air. It’s in the mid-70’s here and it’s gorgeous. My mother-in-law texted me from Denver and they are buried in snow!

So I guess there are couple more soup days left until spring is officially here. This soup is beyond easy. It definitely qualifies for a “No-cooking” Friday.

This White Bean and Sausage Soup recipe is from my friend Stephanie who has given me so many great recipes over the years. 
 
This soup has only a few ingredients but is packed with flavor. Even my kids who were hating on the looks of it, devoured this soup.

WHAT KIND OF SAUSAGE DO I USE?

When I’m making it for my kids I use mild sausage but when I make it for adults I like to use a spicy sausage.

This White Bean and Sausage Soup is from my friend Steph only has six ingredients and has spicy sausage, basil, tomatoes, and beans!

Cook Time: 15 minutes
Total Time: 20 minutes
Servings: 6 servings

Ingredients

  • 1 lb mild or hot Italian sausage
  • 2 cloves garlic, minced
  • 2 (15 oz) cans white cannellini beans, rinsed and drained
  • 32 oz chicken broth, (I use Better than Bouillon Base)
  • 28 oz can Italian style diced tomatoes, undrained
  • 1/4 cup fresh basil
  • Salt and pepper to taste

Instructions
 

  • In a large pot or dutch oven, brown the sausage. Drain. Add the garlic and sautee for one minute.
  • Add the remaining ingredients (except the basil) and simmer for 15-20 minutes to let the flavors blend. Stir in the basil and serve.
