Stuffed Pepper Soup
Stuffed Pepper Soup is a flavorful Mexican soup with ground beef, tomatoes, bell peppers, and rice. An easy dinner for any busy weeknight on the stove top. A great recipe to use leftover rice.

STUFFED PEPPER SOUP RECIPE
It was a chilly night here in Florida which makes me jump into soup season mode. Cold doesn’t happen that often and homemade soups happen to be my favorite but I can’t justify them in this heat.
This recipe is basically traditional stuffed peppers in soup form. It’s a hearty bowl of soup with no crazy ingredients. Just traditional healthy ingredients that are hearty and filling.
INGREDIENTS
- lean ground beef – You could use ground turkey as well.
- tomato sauce
- garlic cloves
- diced tomatoes – I like to use the ones with Italian seasoning in them.
- green, red bell pepper, or orange bell pepper
- beef broth or beef stock – You could use chicken broth as a substitute.
- white rice – I use long grain rice. You could also use brown rice as an option.
TOPPINGS:
I don’t think any stuffed pepper is complete without some cheese and a dollop of sour cream.

HOW TO MAKE STUFFED BELL PEPPER SOUP

In a large pot or Dutch oven, heat the olive oil over medium heat. Brown ground beef and onion until the beef is no longer pink. Add the garlic for the last minute of cooking.

Add the beef broth, tomato sauce, diced tomatoes, and green bell peppers. Bring to a boil and reduce heat to a simmer uncovered for about 30 minutes or until peppers are tender. Add salt and pepper to taste.

While soup is simmering cook rice according to the directions.

Stir in the cooked rice right before serving. If you want it thicker, add more rice. You don’t want too much rice because the rice will absorb the liquid so it’s best stirred in right before. Serve with crusty bread.

Stuffed Pepper Soup
Ingredients
- 1 tablespoon olive oil
- 1 lb ground beef
- 1/2 cup diced white onion
- 2 cloves garlic, minced
- 3 cups low-sodium beef broth, (I like Beef Better than Bouillon with water added)
- 1 (14.5 ounce) can tomato sauce
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup green, red, or orange bell pepper, seeded and diced
- 1 cup uncooked rice
- (optional) toppings: shredded cheddar cheese, sour cream
Instructions

Thank you for the detail on mixing in rice at the end and to also not save leftovers mixed together. Whenever I read these recipes I am hesitant to try anything with rice/pasta in it because I know it will balloon up if you mix it in while cooking and saving leftovers.

Stuffed pepper soup is one of my favorites. Where I am it’s 30 out and snowy so a perfect night for a big pot. Delish!!
Tasted exactly like stuffed peppers, but easier and faster. We threw on a bit of shredded cheese at the end. Good stuff!

I made this and it was delicious, I had some Red, Yellow and Green peppers so I used some of each just to add a little more color. It made it look as delicious as it was.

The recipe is described as a spicy Mexican soup, but the ingredient list doesn’t include any spices. It sounds very bland!
Spicy might not be the right word. Try it first though!
What do you add to the mixture when you make stuffed bell peppers? Beyond salt and pepper probably nothing else. This has onions and garlic and that alone is adding some good flavor. If you want to add more spices no one will arrest you!
