We’ve been making a version of this zucchini recipe for years. The version my husband grew up with had zucchini, eggs, cheese, and saltine crackers on top.
This version is healthier and has more protein with ground beef on top in a marinara sauce.
HOW TO MAKE ZUCCHINI CASSEROLE

Preheat oven to 400° F. Place zucchini in colander; sprinkle with salt. Let stand 10 minutes, then squeeze out moisture as best as you can.

In a large bowl, combine zucchini with eggs, Parmesan and half the mozzarella and cheddar cheeses. Press into a greased 13×9. Bake for 20 minutes.

While the zucchini is cooking, in a large saucepan, cook beef and onion over medium heat until meat is no longer pink, drain. Add the tomato sauce; spoon over zucchini mixture. Sprinkle with remaining cheeses; Bake until heated through, about 10 minutes longer.

Zucchini Pizza Casserole
Ingredients
- 4 cups unpeeled zucchini, shredded
- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1 lb ground beef
- 1/2 cup chopped white onion
- 2 cloves garlic, minced
- 1 (15 ounce) can tomato sauce

Making now see no indication when to add garlic I added to sauce

This is a very well written recipe with clear instructions & best of all a perfectly delicious result – we are a family of 5 & there is often 1 or 2 who don’t agree on what we’re having for dinner & this was one we all loved. Everyone had seconds & the whole pan was gone after dinner. Fantastic!

This recipe is really good, and the teenagers didn’t even know it was healthy. For the marinara sauce I used Paul Newman organic marinara sauce, instead of recipe marinara sauce. Turned out great!!
