ONE-POT BACON BROCCOLI PASTA
I’ve found there are two types of people in this world. Those who like their bacon so well done it’s on the border of being burnt and those who like it walked through a warm room.
I remember the first time I made breakfast for my in-laws I burnt the bacon and I was horrified. They, on the other hand, were fighting over the burnt pieces.
I definitely don’t like my bacon burnt but I do appreciate it cooked all the way through.
My problem with most pastas with bacon is that they let the bacon cook in the sauce. While that does give that bacon flavor all throughout it basically is boiled bacon which…ew…yuck.
The key to making this One-Pot Bacon Broccoli Pasta successfully is that we cook the bacon, drain it, then cook the rest of the dish in the same pan. So we get a little of that bacon flavor without soggy bacon.
I came up with this pasta for my family. I made it a thousand different ways until we decided this was the best version. One-pot meals will always have my heart.
CAN I USE A DIFFERENT PASTA IN THIS RECIPE?
Sure. You can use any small shaped pasta such as penne or farfalle pasta.
CAN I ADD CHICKEN TO THIS RECIPE?
You can add rotisserie chicken or cook cubed chicken after you’ve cooked the bacon.
CAN I LIGHTEN UP THIS RECIPE?
This recipe is already healthier than most creamy pastas since we are replacing part of the cream with chicken broth. You could use half and half instead of cream to lighten it up even more.
OTHER ONE-PAN RECIPES:
One-Pot Bacon Broccoli Pasta
Ingredients
- 4 strips of bacon, cut into chunks
- 2 cloves garlic, minced
- 2 cups dry rigatoni pasta, (or other small shape like penne)
- 2 cups heavy cream
- 1 1/2 cups low-sodium chicken broth
- 1/2 teaspoon salt, (and pepper to taste)
- 1/4 teaspoon crushed red pepper
- 2 cups broccoli florets
- 1/4 cup grated Parmesan cheese, (more for sprinkling on top)
Instructions
- In a large saucepan, pot or Dutch oven, cook the bacon until crispy. Remove bacon from pan and drain on paper towels. Drain fat from the pot leaving about 1 tablespoon in the pot.
- Add the garlic and sautee for about 30 seconds. Add the uncooked pasta, cream, chicken broth, salt (and pepper), and crushed red pepper. Stir. Bring to a boil then reduce to a simmer. Cover and cook for about 6 minutes making sure to stir once in a while and keep noodles covered in liquid.
- Add the broccoli to the pot and cook another 5-7 minutes or until the broccoli is soft. Continue cooking until sauce is a little thicker. It will be thin and then thicken towards the end. Stir in the Parmesan and reserved bacon.
- Serve immediately and top with additional Parmesan.
Just made this and we love it!
I used half & half, because that’s what I had. Added a red bell pepper and onion, because they it needed to be used. Also added about a teaspoon of Italian seasoning. Most definitely a keeper! And I’ll make again and again 😋

This was really delicious. Creamy, a little salty, a hint of spice, good mouthfeel. And a one pot meal on top of all that! My husband said this recipe is a keeper! Next time I’ll make sure to have some bread to soak up the sauce.

This recipe makes zero sense in cooking the pasta ?? Why would you add uncooked pasta to this dish i am adding liquid over and over to get it to cook
To make it a one pot dish. You might have your heat too high if you have to keep adding liquid
Delicious! I used coconut milk instead of cream jus because that’s what I had and it was sooo goos. I added a chopped onion with the garlc and doubled the recipe to use up stuff in the fridge. I think it would be good with mushrooms too.

Yes, it definitely goes from thin to thick but you have to cook it long enough.
Really good! I added some onion in with the garlic and used 1c heavy cream to 2.5c broth, substituting mushroom broth instead of chicken. It turned out great. The mushroom added umami which is sometimes missing from creamy pastas.

I always use fresh broccoli.
My family LOVES this dish!!! I make it at least twice a month. Its so simple and delicious. Sometimes we sub sausage for the bacon or extra veggies with the broccoli and we love to add some blue cheese crumbles to it. There are never any leftovers.

Could I use milk instead of heavy cream?
Milk will not thicken as much by far but you could use it.
I’ve used light cream or half and half before because we didn’t have heavy cream on hand. Both worked.

Heavy cream is in the refrigerated second. Evaporated milk is in a can.

I added mushrooms, and used macaroni. It was a favorite for the whole family. Soon to be a recurring dish I’m sure!!
Not sure what I did wrong but the sauce was very soupy and seemed to be too much compared to the 2 cups of pasta. Is it 3.5 cups of liquid and 2 cups of dry pasta?

In the instructions it says to cook the sauce until it thickens. The longer you cook it the more it reduces down. Hope that helps!

omg, I actually started gagging when you said “boiled bacon.” I know exactly what you mean, and I always hate when I find that in pasta dishes at restaurants.
