S’mores Cookies
S’mores Cookies are graham crackers topped with chocolate chip marshmallow cookie dough and Hershey squares. These cookies have become a tried and true reader favorite on the blog. I may earn commissions for purchases made through links on this post.

Yesterday was busy with swimming, BBQing, and relaxing. My Laundry Monday turned into Laundry Tuesday topped with an additional load of damp swimming towels.
Being the good parents we are we counted swimming as baths for the kids and sent them to bed smelling of sunblock.
Then as I snuggled on the couch to write a post about these cookies I brought to our BBQ I just…could not…keep…my eyes…open. *Snooze*
S’MORES COOKIES RECIPE
This S’mores Cookies recipe are a perfect hello to summer. I’ve seen these floating around the web and you know how much I loved these S’mores Bars so I had to give ’em a try.
These delicious cookies have a graham cracker base and chocolate chip cookies are sprinkled with chocolate and marshmallows topping it.
The crunch of the graham cracker with the gooey cookie is the perfect combination.
INGREDIENTS
- GRAHAM CRACKERS – we’re not using graham cracker crumbs her but large graham cracker pieces to get that graham flavor.
- BUTTER – you want to use softened butter but still cold butter .
- BROWN SUGAR
- WHITE SUGAR
- EGGS
- VANILLA EXTRACT – always use pure vanilla and not imitation.
- BAKING SODA
- SALT
- ALL-PURPOSE FLOUR
- SEMI-SWEET CHOCOLATE CHIPS
- MINI MARSHMALLOWS – Gooey marshmallows are folded into the cookie dough. Large marshmallows would be overkill here.
- HERSHEY’S CHOCOLATE – a square of a Hershey bars goes right on top of the cookie for that iconic s’mores with the milk chocolate taste.
Place one and a half tablespoons of dough on each graham cracker square using a cookie scoop.

S’mores Cookies
Ingredients
- 11 Tablespoons unsalted butter, softened
- 1 cup brown sugar, packed
- ½ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla
- 2 ½ cups flour
- 1 teaspoon baking soda
- ½ teaspoon sea salt
- optional 1 teaspoon cinnamon
- 1 cup semi-sweet chocolate chips
- 1 cup mini marshmallows
- 3 regular sized Hershey’s bars, broken into pieces
- 2-3 packages graham crackers, broken into squares
Instructions
- Preheat the oven to 375 degrees. Line a large sheet pan with parchment paper.
- In the bowl of an electric mixer, cream butter with white and brown sugar until light and fluffy. Add the eggs and vanilla and mix until combined.
- In a medium bowl, whisk together the flour, baking soda, sea salt and cinnamon (if using) to combine. Set aside.
- Add the flour mixture to the butter mixer and combine on low speed.
- Fold in the chocolate chips and marshmallows.
- Lay out graham crackers squares side by side on the pans as close as possible (they should be touching). You may have to add or remove graham crackers according to how much dough you have but I usually use around 36. If you want your cookies thicker you will use more dough and less graham crackers.
- Place 1 1/2 tablespoons of dough on each graham cracker square. about 1 – 1 ½ inches apart. For extra s'mores look, I like to press 1-2 mini marshmallows right on top of the dough balls.
- Bake for 9-12 minutes. They will be done when the edges begin to turn golden brown. Remove to a wire rack to cool.
- After cookies have cooled for about 2-3 minutes, press the Hershey’s bar pieces on to the top. You can place as many pieces or as little as you want depending how much chocolate flavor you want. I like to add a tiny sprinkle of flaky salt on top. For clean cutting make sure cookies are completely cool and cut with a sharp knife.

I got this recipe from Pinterest last month and I’ve made it a few times since. A hit every time – not a crumb left! The fridge tip only makes it a bit less gooey while spooning onto the grahm crackers – not really needed. I also find that I need to throw in an additional handful of marshmallows.

I think chilling the dough in the fridge also allows the dough to “relax”, giving the cookie a better texture.
This is the first time I’ve made them and these are delicious! I especially love the flavor the cinnamon adds. I had to adjust the cooking time since they did take a bit longer than 5-7 minutes the second time.

I made these twice and the first time was good with cinnamon graham crackers from Aldi and the second time with name brand honey graham crackers! The first ones with Aldi crackers was way better, the second time the cookie dough didn’t cook through and they looked done but were way under cooked for my taste!!

It’s just 1/2 cup of chocolate chips. There aren’t a lot since we are putting more chocolate on top with the Hershey bars.

These cookies are amazing! Taste better than what they look which they already look good. I made 34 HUGE cookie on 350 like another review suggested. Needs to bake more then 5-7 minutes after putting choco bar on top. Will make again, thank you!

I baked the first batch at 375 but the grahams were a little too done and the cookie not quite finished. I turned it to 350 for the second round and it worked much better. These are delicious! I will definitely make them again but probably sans the cinnamon.

these were amazing! my friends and I made them for a counseling class about addictions. I have a feeling there will be a new addiction to discuss! Also, I used crisco because I was out of butter and they turned out perfect!

Came across these on Pinterest and decided to give them a try as a potential candidate for a holiday cookie exchange I’m doing with friends. Wow, they are SO good!! I tried these and they were very good. I also overcooked my grahams a bit which resulted in a super crispy, burnt taste. HOWEVER, the next day they were GREAT!!! I think I ate all of the leftovers by myself.

One word – addictive. These really are addictive. I mean, who doesn’t love s’mores?! These are the perfect combination of a messy s’more in a neat cookie!
I just made these for my daughter’s class, who are having a mock campfire in class tomorrow. They are delicious!! I cheated and used Pillsbury chocolate chip cookie dough in the jumbo tubes but they came out great!!

I’ve made these twice this week. Had to get the timing adjusted for my oven. First batch was a tiny bit overdone, but the second batch was AMAZING! I tried the recipe today, and they turned out great! I only baked them for 10 minutes, and they’re still quite gooey and soft inside. Definitely a keeper!
Tried these the other day while babysitting. Not only did we have a blast making and baking these bad boys, but they turned out to be HEAVENLY. I told my boyfriend that I would save him a few, but I honestly don’t think they’ll make it past myself, my mom, or my brother! I’ll surely be making another batch of them soon! Love them!

I made these yesterday for a playdate. When I brought them out I told everyone that it was the first time I’d ever made them so if they didn’t like them, don’t worry, they wouldn’t offend me. One little boy (about 6) tasted one and said to me, “This is the first time you’ve ever made them? You should make them 100 times. They’re DELICIOUS!” Then, his 3-year-old brother asked if I’d make them for his birthday. 🙂

Did you use parchment paper? and make sure that your cookie sheet wasn’t too low to the bottom of the oven? So sorry!
After major success with the oreo pudding cookies (AMAZING!), I tried these. Batter was delish! But, my graham crackers got burnt on the bottom and the flavor ruined the whole cookie. :c( HELP?
Just tried with the mix ch. chip cookie dough and it was a bit of a disaster. Will try the original directions next time!
Great idea! I love how the graham cracker is actually the base the the dough ends up sitting on…so easy, and not as messy as the real thing!

OK sure, I’ll take these to my next social function. and we go to the pool every night after dinner to bathe our kids in the summer time… especially after spending all day at Grandmas in her sand vollyball court. The kids love it….Sand packed in the hair, not my favorite.
