S’mores Cookies
S’mores Cookies are graham crackers topped with chocolate chip marshmallow cookie dough and Hershey squares. These cookies have become a tried and true reader favorite on the blog. I may earn commissions for purchases made through links on this post.

Yesterday was busy with swimming, BBQing, and relaxing. My Laundry Monday turned into Laundry Tuesday topped with an additional load of damp swimming towels.
Being the good parents we are we counted swimming as baths for the kids and sent them to bed smelling of sunblock.
Then as I snuggled on the couch to write a post about these cookies I brought to our BBQ I just…could not…keep…my eyes…open. *Snooze*
S’MORES COOKIES RECIPE
This S’mores Cookies recipe are a perfect hello to summer. I’ve seen these floating around the web and you know how much I loved these S’mores Bars so I had to give ’em a try.
These delicious cookies have a graham cracker base and chocolate chip cookies are sprinkled with chocolate and marshmallows topping it.
The crunch of the graham cracker with the gooey cookie is the perfect combination.
INGREDIENTS
- GRAHAM CRACKERS – we’re not using graham cracker crumbs her but large graham cracker pieces to get that graham flavor.
- BUTTER – you want to use softened butter but still cold butter .
- BROWN SUGAR
- WHITE SUGAR
- EGGS
- VANILLA EXTRACT – always use pure vanilla and not imitation.
- BAKING SODA
- SALT
- ALL-PURPOSE FLOUR
- SEMI-SWEET CHOCOLATE CHIPS
- MINI MARSHMALLOWS – Gooey marshmallows are folded into the cookie dough. Large marshmallows would be overkill here.
- HERSHEY’S CHOCOLATE – a square of a Hershey bars goes right on top of the cookie for that iconic s’mores with the milk chocolate taste.
Place one and a half tablespoons of dough on each graham cracker square using a cookie scoop.

S’mores Cookies
Ingredients
- 11 Tablespoons unsalted butter, softened
- 1 cup brown sugar, packed
- ½ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla
- 2 ½ cups flour
- 1 teaspoon baking soda
- ½ teaspoon sea salt
- optional 1 teaspoon cinnamon
- 1 cup semi-sweet chocolate chips
- 1 cup mini marshmallows
- 3 regular sized Hershey’s bars, broken into pieces
- 2-3 packages graham crackers, broken into squares
Instructions
- Preheat the oven to 375 degrees. Line a large sheet pan with parchment paper.
- In the bowl of an electric mixer, cream butter with white and brown sugar until light and fluffy. Add the eggs and vanilla and mix until combined.
- In a medium bowl, whisk together the flour, baking soda, sea salt and cinnamon (if using) to combine. Set aside.
- Add the flour mixture to the butter mixer and combine on low speed.
- Fold in the chocolate chips and marshmallows.
- Lay out graham crackers squares side by side on the pans as close as possible (they should be touching). You may have to add or remove graham crackers according to how much dough you have but I usually use around 36. If you want your cookies thicker you will use more dough and less graham crackers.
- Place 1 1/2 tablespoons of dough on each graham cracker square. about 1 – 1 ½ inches apart. For extra s'mores look, I like to press 1-2 mini marshmallows right on top of the dough balls.
- Bake for 9-12 minutes. They will be done when the edges begin to turn golden brown. Remove to a wire rack to cool.
- After cookies have cooled for about 2-3 minutes, press the Hershey’s bar pieces on to the top. You can place as many pieces or as little as you want depending how much chocolate flavor you want. I like to add a tiny sprinkle of flaky salt on top. For clean cutting make sure cookies are completely cool and cut with a sharp knife.
We love making them and we all love eating them. We made for my sons Cup Scout troop and the parents eat most of them before the boys could eat them. Needless to say that they are always asking for these cookies.

wow these tasted delicious!! nothing could go wrong with these ingredients, what’s to love! Plus I love the hint of cinnamon – YUM! Bringing one batch to friends with a 3 year old and another to a beach party. Mine were not as pretty as pictured b/c the graham crackers were mostly broken crooked when I opened the box 🙁 however on one batch I broke them into bite size pieces and had the cookie dough totally cover it so when they came out of the oven, it looked like a round cookie shape with a little surprise backing of cracker. Just a tip for someone who gets a bad box of crackers! But even the messy ones are so good, who cares! thanks for this recipe!

These are delicious cookies, but the baking was a bit tricky. I first baked the cookies for 6 minutes, then added the Hershey square, then baked the cookies for another 8 minutes. While the tops of the cookies were golden brown, the centers were still under baked so they ended up going back in the oven for another 5 minutes to get deep golden brown. I didn’t realize that adding the graham cracker to the bottom of the cookies would effect their baking time so much. I will make these cookies again but without the graham crackers.
Sorry Ana! Maybe try putting less dough per graham square so it bakes more evenly. Does that make sense?

Made these today with my daughter and they are awesome! Had some leftover graham crackers so her idea was to put them on top of the cookie so you can eat them like an actual s’more. They are so sweet you can only eat one!

yum yum yum yum yum!!!!!! A co-worker made these and brought them in – they were SO good we were all clamoring for the recipe. They look a bit plain, sound a bit plain even, but holy mother of campfires they’re tasty. I even took two home for my kids, but they never even saw them! I will be making these for a luau party we’re having and I am willing to be that no one will care that they are not really theme-related! Thank you!!

Yum!! Made these but only had graham cracker crumbs in the house so mixed in 1 cup to flour mixture and it came out great!! Will have to try with the grahams next time!! Thanks!!

I made these for a Christmas party today! I doubled the marshmallows but they still melted into the dough and didn’t really show up on the finished product…that was a bit disappointing. But they look and taste really good! I also turned down the temp to 350 (using dark cookie sheets) and put them in the upper third of the oven so the grahams wouldn’t burn. I baked for 5 minutes, then put the hershey’s on, then baked for 8 minutes more and they look perfect (except for the marshmallow thing). Love the flavor the cinnamon adds too!
I made this recipe this past weekend and everyone that has had these cookies have asked for the recipe. I accidently doubled the cinnamon and they still turned out amazing! These will be on my holiday baking list forever!

Fellow foodies. These do not taste anything like S’mores. They don’t even taste good. Made them this evening – throwing them in the trash now. Take-away: in the future, if I want S’mores, I will make S’mores. Counting myself sadder, but wiser.

I think I must have made them wrong too…they were terrible. The dough did not taste like cookie-dough but I thought they might bake-up delicious all-together. Unfortunately, I threw mine out as well.

I have been using this wonderful recipe for two years now. EVERYTIME I bring these cookies somewhere, someone asks me for the recipe! I stumbled upon a discovery and a slight enhancement to this recipe that I wanted to share with you. . .if you us fresh and new marshmallows, the cookies turn out as pictured and are quite yummy. . .BUT if you use slightly older marshmallows or the ones that have been in your pantry for a month or two. . .the cookies look so much better. . .the marsmallows retain their shape and actually look a whole lot like roasted marsmallows. They taste a bit different. . .but even better!

Hi! These cookies look so yummy! I would love to make these for my sons upcoming graduation party. We are having a cookie “bar” and these would be a wonderful addition to all the other varieties of cookies I’ve made. But, I’m wondering, can I make these in advance and then freeze them?
I think you could but I’ve never tried it. I don’t see why you couldn’t.

You can make the dough ahead of time. The graham crackers will get soft if you make the cookies ahead of time.

These S’More cookies were a hit!! I made them last night for a dinner party with Oma and Opi (Grandparents). My 15 year old son said…..”Holy cow Mom, these are addicting!! I have eaten 5 already!!” Suffice to say they are already a summer favorite. I saved some to take to Camille and Lee and the kiddos today;) I am Cami’s older sister and she told me about your blog. We LOVE food at our house and have 3 sons to devour everything I make. Thank You for all the wonderful meal idea’s. I cannot wait to try the blue cheese burgers. All-purpose. All of my recipes use all purpose flour unless I say otherwise.
I used salted butter I didn’t realize will that be ok?
Sure! usually if you use salted butter than omit any salt in the recipe but with all the sweetness going on, it should be fine.
I’m sorry, but I can’t for the life of me figure out how anybody had success with these cookies. The crackers burned before the cookie dough could cook and the marshmallows ran down on the pan and were burning. I recommend s’mores bars, with the graham mixed in.
I’m sorry Kay! I don’t know why? Did you line your cookie sheet with parchment and make sure you’re not baking them on the bottom rack of your oven. All ovens cook differently and it sounds like you may need to bake these for less time.

Just wanted to tell you I made these for work on Valentine’s Day (I like to bring sweet treats!), ended up having to make a second batch for the later shift because the first batch vanished in a heartbeat! I ended up giving several people the recipe after they asked. They turned out beautifully, and nothing else I’ve baked has gotten such rave reviews!

I mad these yesterday and they turned out good but not like yours pictured. I found my dough to be crumbly and the chocolate chips and marshmallows did not stick into it well. I chilled the dough for a couple of hours and it was pretty firm. I made the balls and out them on the graham crackers but they did not spread. Even when placing the chocolate piece on, I pressed them out a little but they did not cover the cracker. I baked them on wax paper and had no trouble with burning or getting off the cookie sheet. I also broke the crackers into individual squares first so I didn’t have to worry about cutting. They taste great. The cinnamon in the cookie batter adds such a great flavor, i always love using it. These still taste good the next day, even though warm is divine. I am also trying freezing them with my food saver. Thanks for another great recipe.
Ahh. Tracey I have no idea why your dough was crumbly. It’s important when you measure flour to spoon the flour into the cups and not pack it. Could that have been the problem?

My girls and I made these tonight they was a big hit I used 1/2 tsp of cinnamon because it said optional my husband said he thought I should’ve used 1 tsp. I bake them for 5 minutes then another 6 minutes no problem with burning.

I found this recipe on Pinterest and decided to give it a try (love S’mores). I made a double batch to take to a get together we are going to tomorrow morning. I always take a treat sack of some kind since this a group of people my hubby (retired) used to work with, and so many of them are gentlemen whose wives have passed away and they never get “homemade” goodies anymore. They tell me they only come to the meeting for the yummy treats I bring (lol) I followed the recipe exactly (refrigerated the dough overnite) and used the 1.5 tablespoon “scoop”. I did bake at 350 on a silpat baking mat on a large sheet pan. Mine look just like yours, up to the second baking! When I put them back in they did not spread out and cover the whole graham cracker like yours, but they sure look tasty! I think I will press them out a little more next time I make them, so they cover the graham. Letting them cool as we speak, so I hope they are good and stay “soft”. After all, I have a reputation to live up to … ha, ha. Will let you know the feedback! thanks for a great recipe and an amazing website!
Ahh. Hopefully they turned out for you. The spreading usually has to do with how cold or not cold your dough is.

I’m sorry! 2 1/2 cups is pretty standard for cookies. Did your dough look like the dough in the pictures? I’ve made these a lot and have always had rave reviews.

Sounds simply delicious–but do you have any ideas on making these eggless? Marshmallows are fine, but I generally don’t use eggs in my cooking!!

I tried these, and they are very tasty, although next time I may make them without cinnamon. I did, however, have an issue with them not baking all the way through on the bottom.

I love these. Like really LOVE them. Personally, I think they are much better the next day. I just made a double batch, with my 1.5 TB cookie scoop and ended up with 86 cookies. I top each with half of a fun size Hershey bar – which is just right for me! Thanks.
Also, I baked them on insulated cookie sheets, on top of silicone baking sheets. Once again – THANK YOU for my new FAVORITE cookie!

Is there a faster way for the Hershey’s to harden faster. Whenever I try to cut the cookies, the Hershey’s just make a huge mess.

I used parchment paper and turned the oven down to 325 and the graham crackers burnt and ruin the entire batch. Skip the graham crackers, they just burn and they’re totally unnecessary.
Oh man! Sorry about that. It helps if you try to cover the entire cookie with the cookie dough so that it doesn’t burn.
We made these last night and LOVED them. After I finished a large cookie sheet, I crumbled up the last few graham crackers, added them to the leftover dough, and baked them as regular cookies. They were yummy, too, but we preferred the bar cookies. We lowered the temp to 350 and baked quite a bit longer, until the cookies were slightly golden on the top. Thank you for this great recipe!

I made these for a BBQ yesterday and they were a huge hit. HUGE. One guest ate 4 and took 2 home. I used dark chocolate chips because that is all I had. I also sprinkled about 1/4-1/3 cup additional marshmallows over the top after I added the Hershey’s pieces. I think this made it taste and look more s’mores-ish. My batch made 36 squares. I was able to fit 2 dozen into a standard half sheet pan and the remaining dozen easily fit into a 15″ jelly roll pan. Next time I may cut the squares into halves to stretch the recipe. So good! Thank you for this keeper of a recipe!!!!!

I would say that you could make the s’mores cookies the day before. In Florida, graham crackers get soggy after a day from the humidity here but I imagine they would be fine anywhere else stored in an airtight container.
The caramel apple cheesecake bars can be made at least 2 days in advance. Cheesecake gets better over time I think. Store them in the fridge covered well so they don’t taste like your fridge! Haha! Good luck and welcome!
Made these today 5/2/13 very easy and good. Instructions are right on.. I did not chill mine and they turned out good.
I’ve made these 4 times now and they are divine. I love them and wish I could eat them everyday. I added some extra marshmallows to dough and a couple on top for looks and worked great.

They are good but I feel like the graham cracker on the bottom prevents the cookie from fully cooking. Did anyone else have this problem? And if so how do I resolve it?
Do the marshallows harden after the cookie cools? Do they need to be eaten right away?
I made these for a cookie competition. They taste amazing!! Out of 25 teams- we got 2nd place!! Marcia- no. Mine chilled in a fridge over night after they were all cooked and done. The marshmallows were really good!!
